How to Make My Favorite Breakfast

Don’t get me wrong, I love a good ole bacon & eggs with toast on the side classic breakfast, but sometimes you just need to switch it up a little bit. This is my favorite breakfast recipe simply because you can make it for just one person or an entire army....plus, I think it looks a little fancier than it actually is to make.
I’m sure somewhere along the line someone has made this or something similar before me, but I just came up with it one day out of the necessity of having to use up stuff in the fridge. It’s basically just a twice baked sweet potato and then throw in an egg. Let me know if you make it or what things you stuff yours with!

Being a farmer myself and a father of a daughter who is a Junior at Purdue so she is almost as old as you I think I better keep my eyes open the next time I take my daughter with me to a farm machinery show. That looks absolutely fantastic. So glad ya didn't forget the bacon bits. I'm going to try that this weekend. ( not enough time on work days) I'm just like you with the sweet taters. I never liked em when cooked with more sweet stuff. Then I started growing taters and tried some plain, I luv em straight up. No need to add sugar, cinnamon or anything. My favorite meal is rib eye steak, sweet potato and fresh string beans in fresh garlic. What a combo. Ummm, heaven.

Looks like a wonderful meal. What I think would work great as additional ingredients is either some Gouda or Emmental cheese (or both if you're feeling fancy) and oregano. You can't go wrong with that combo.

They look really good, I’ll have to try that recipe. You know, if you want egg in the morning, just get yourself a small margarine container, crack it in the container, mix it around with a little salt, pepper or whatever you want, put in microwave for about a minute with a paper towel over it and they’re cooked. Take a tea spoon and run it around the outer edges and it should come right out on your plate. Cheers
