Rich, smooth, and decadent homemade Nama Chocolate! Made with quality dark chocolate and fresh cream, this ROYCE’s copycat chocolate is truly a special treat. It’s one of the most popular gifts from Japan, but you can easily make it at home.

INGREDIENTS
400 g (14 oz) good quality dark chocolate (70% cacao) (Semisweet for less bitter taste)
200 ml (¾ cup + 1 Tbsp) heavy (whipping) cream (38% fat)
1 Tbsp liqueur of your choice (optional; I use Brandy. Adjust the amount according to your liking.)
Cocoa powder (to coat the chocolate)

Thanks for this, Nami! It is everywhere here in Hokkaido but now I can try doing this when I go home. I always love Royce’s Nama Chocolates and bring a couple of boxes back as omiyage but always not enough. The New Chitose Airport in Hokkaido has the Royce Chocolate World (factory, museum, shop, and bakery) and you can see how they manufacture the chocolates although I still have to try the chocolate bar bread!

Attempted making this today only for my chocolate to seize melting and ended up with a soil like consistency. Discouraging, but I ended up fixing it. We will see how it turns out. Despite being an easy recipe chocolate melting is extremely prone to error. I used 78% dark chocolate, maybe that’s what made the difference.

OMG I so missed these chocolates...I used to buy them on Narita and Osaka airports. since flying is not a good idea these days,I so was missing them thanks a lot for having had shared this video I made them,with slight differences,had 2 tbsp of Brandy in half the recipe and used black chocolate and added erithritol tasted great and are keto friendly :)))

Look at her Green Tea Chocolate recipe. White chocolate has a much higher fat content so you need less cream. I made them without the matcha or butter and they turned out great! It's essentially white chocolate ganache, just thicker.

So I tried this recipe, it's a bit heavy so one might want to make small chocolate bits. Also, a tablespoon of liquor hasnt been enough to taste it for me (maybe b/c it was not a liquor but umeshu...). It's a easy recipe, I recommend trying it! :)

Hi Nami. I tried making this recipe with 88% cacao (300 grams) and 45% fresh cream (200ml) and my chocolate came out lumpy. I was wondering what I can do to improve myself? Did I add too less fresh cream? Too high cacao level chocolate? Thank you!

So i see that this recipie does not have butter So make sure ur using cream that has minmimum 40% fat Also equal quantities of cream n chocolate give it a stable structure

Hello. Mine also melted very quickly. It doesnt look as hard as yours when i removed it from the fridge. Im using Beryls bittersweet. Is it better if I use Van Houten Intense dark?

Zelle Castro the thing with chocolate recipes is, the quality of chocolate speaks volume and especially on recipes with simple ingredients like this, the quality of the chocolate makes hella lot of difference between heaven and yuck. If you can, use decent quality chocolate, i think these days, callebaut is pretty easy to get, and affordable. (Theres also other brands of good quality chocolate like varlhona, cacao barry, and even the professional Lindt line, depending on where you are) Definitely do not use cheap chocolates like beryl and van houten for this 🙅‍♀️😔 (i speak as a professional chef) Also, they are meant to melt and it’s not suppose to be hard. It should be like a soft fudgy texture

@@artofersuke as i have replied to the OP, use a different chocolate. cheap chocolate is cheap because it doesnt have a lot of actual chocolate (this beryl and van houten are called COMPOUND CHOCOLATE and it mixes some percentage of cocoa with VEGETABLE OIL and SUGAR which is why it is so cheap. its okay to use them in stuff where they arent the star ingredients/have other ingredients) because they dont taste as good and oft times gritty REAL chocolate are made with cocoa mass and COCOA BUTTER (not vegetable oil). why they are expensive is because cocoa butter is an expensive ingredients. and real chocolate for baking, for making chocolate, especially, SHOULD NOT CONTAIN any other kind of lipids except cocoa butter. the intensity, fluidity, and taste are affected by how much of it is in it. again, get a proper brand (refer to my other comment in this thread) and go for at least a 60% cocoa (callebaut 54% can work here too) dark chocolate if you want it to set properly. in chocolate recipes where the ingredients are simple like this, the quality of the chocolate matters, you pay for what you get. also do not boil the cream, use a thermometer to measure when heating. the temperarure of the cream when u are heating should be around 80 celcius. add soften butter instead of using hard butter out of fridge. this also matters because boiling is splitting the cream creating diff texture. lastly, if u live in a hot and humid country, it will definitelt melt faster but soft immediately right out of the fridge is not right.

I tried to make it and it taste fantastic. But the chocolate can't be frozen. I already follow the recipe step by step (besides the whipping cream, i used the light one instead the heavy one). Any tips and advices?

Hi :) thank you for sharing. But the pure cocoa powder is usually taste bitter, is there any mix or some kind before sprinkle it on top?

Sorry I threw away the box (cocoa powder is in a mason jar now) but it was imported from Netherlands

Mine came out way too hard. I think I need to add more cream. I'm going to do at least 1 cup cream next time and 50g of butter as well.

I like dark chocolate, which is pretty sweet to me. But you can use milk chocolate etc. :) Thanks for watching!

Isn't that Tulip brand compound chocolate? Does it affect the texture and taste compared to couverture chocolate?
