Helpful tip if you don’t have a cookie cutter that is round: you can flip a glass cup upside down with a wide opening and use that as your cookie cutter substitute! Hope this helps😀

Maysa El Souki I haven't had mochi ice cream in decades. My late dad is the one who truly introduced me to more in depth Asian dishes that haven't been Americanized. The last time I had mochi (mochi itself or mochi ice cream) was some 30yrs ago when we found each other by sheer happenstance. I'd ended up in the DC area raising a younger brother. Contrary to what I was left to believe, he hadn't died. He just had no idea where my birth mother disappeared to w/me. Some months after we found each other, we started meeting up each morning to go on a 10mi run on a trail along the Potomac. Considering how much we ate out, it was probably a good thing too. 🤣 Dad passed away 5yrs ago this past Christmas, but his love of Asian food has remained w/me. Just wish I'd figured out long time ago how easy it really is to make it home. If you live near an area w/a decent size Asian population, I'd highly recommend checking out restaurants in the area. It's been my experience that the owners/chefs are more than welcome to make authentic or Americanized-light dishes, especially if you go during off-peak areas. It allows for finding out what you like, what you don't really care for, & what you can learn to appreciate. If you're luckier than me, you can learn to make dishes at home without needing to wait until empty-nest syndrome kicks in after your last kid has left for college & you find you have tons of time to fill. 😉👍 Our youngest graduates from college in the spring. At the end of her 1st year, I learned that I enjoyed cooking & baking, especially when it wasn't tied to that horrible question everyone hates, "What am I going to cook for dinner?" It's hard to believe sometimes that we haven't had store-bought bread in ages b/c I make it from scratch each week.

When I was in Japan studying abroad, I would always buy mochi ice cream when I went to the grocery store. It came in a snack pack with two that I would eat on my way home. I loved it because it was a 100 yen for 2 and made a great snack. Now I can only find it at Wegmans for a $1.50 for each individual one. Glad I can make my own now.

Yup! Yesterday after I made mochi, I left them in room temperature (in London its cold) and then took it out about 3-5 hours later to put in the filling. The mochi dough can still be rolled over and still as chewy! 😄

Shiratamako or Mochiko as said on the list.... look at Fred Meyer, Safeway, QFC or any Asian supermarket and where the Asian Food section is. When you use the starch flour for dusting, make sure to microwave it on hight for 2~3 minutes in order to cook instead of eating raw starch flour(although, some Asian stores sell COOKED starch flour).

For making the mochi, its the same exact video for the daifuku mochi, i personally like watching cooking videos where the person is actually making it then and there instead of a reused clip. it's probably more convenient this way though, since its the same process. Nonetheless the videos are very helpful, can't wait to try making these sweets :)

I tried ice cream mochi once, best thing I've ever had, however, they're very expensive, this will definetely get me some bang for my buck.
