Hedy, you are an excellent teacher. You remind me of my mother teaching me to cook. She passed 25 yrs ago. We are not Italian, but boy, do we LOVE Italian food! My mother made this for as long as I can remember, I did not like it as a kid, but now I love it,we use different meats and do an egg wash just for that shinny look, but close enough thanks for posting looks yummy

I have a Bosch and it works wonderfully as well....we put ours next to our Wood Stove... nice and toasty or in a cold oven with the light on or the microwave to let the dough rest.... we don’t use sausage in ours...only different types of cure and smoked ham and salami with the cheeses... I never follow a recipe either...I only use them for inspiration...love it...

you remind me of myself when you cook, especially drinking the wine while cooking. my grandmother used to make this years ago, very similar to your recipe but she always added cut up hardboiled eggs to the filling. I am definitely making this, but I will add the hard cooked eggs as grandma did. thanks for bringing back a good memory.

The summer has been crazy and we are going on vacation, but I'm going to post some simple summer recipes like tomato salad and roasted peppers. @@NannysItalianKitchen I am Italian from NJ but my Mom was Irish and French (Italian on Dad's side) so my Mom never made Easter Pie. She was, however, one of the best Italian cooks. I am making it tomorrow before Easter. Loved watching you make it - brings me back to my family cooking in the kitchen. I live in VA now so I feel like the only Italian around. Oh, and I NEVER forget the wine.

Yes Diane you can use store bought pizza dough and you don't have to wait for it to rise unless it states so in the directions.

Vee Mellina I put it in a pan also sometimes. However, when you use a tray the bottom Cooks better. A Pyrex pan is great because the bottom cooks well.

I try to make this recently. I thought after sausage would been better then my buying hard like salami was. Mine came out ok for a first try . yet only I ate any. I think we will not do this again. It was good . I just figured I would try it once in my life.

interesting my mother and i always made it into a pie ... that looks like a big calzone and looks easier to deal with as far as the dough i like it cold though like the next day .. its hard to wait til the next day after you want it so badly though .. im so bad when it comes to rolling out dough .. i just may make a smaller version and do it like this and make 2 separate ones and freeze it thanks Buona Pasqua !!!!!

It's that time of the year again...time to make pizza rustica and Easter Bread. My son's can't wait, especially my oldest. I make a big one so there is leftover. We cut it and freeze whatever we don't eat. It comes out great.

I do not eat pork. I would like to substitute the following: 1-2 half-inch slices turkey ham DIY turkey, chicken, or sausage made with a food processor (Savory Spice Shop has Italian sausage seasoning that can be used with any variety of meat) Beef or turkey pepperoni (Hormel turkey pepperoni is a bit dry, but it will do if nothing else is available) 3 cups Egg Beaters (i might use real eggs although Egg Beaters only has added vitamins) My oven is only 16"x16". I might have to use a 16"x12" baking sheet. I will let you know how this recipe comes out with the substituted ingredients.
