@@CharlieTheCookAndrews You and my mother Loved Chef Paul Prudhomme. We used to laugh at her talking about Chef Paul Prudhomme. She loved him. I don't think he had Spices back then. My Mother Glossie B. Marshall could make some gumbo. Her secret was Shredded and Dried Shrimp and of course Gumbo File. Without Gumbo Filet there's no Gumbo.....Also just like you she could cook a lot of food in a small space. Happy New Year to you.... Charlie.

@lorne gant season and sear the chicken first then make the stock. Separate the meat from the bones and add the meat into the Gumbo at the end. Hope this helps. Thanks!

Thank you! I like the fact that you appreciate all the time and hard work i put into this video. I wanted it to be a step by step recipe. When it comes to making a gumbo it is important that you have all the directions in it so people can understand how it's made! Majority of the other recipes don't have that!

Lost Below The Fold Yes i saw some of them myself. It's sad because some of them add the incorrect types of ingredients. Plus majority of the recipes use some of shortcuts. My recipe is 100% from scratch especially my stocks I make and show you how to do in the video. I don't think no other recipe has that with both the chicken and seafood stocks made from scratch!

Lost Below The Fold Yes and everyone should know that Gumbo has different cooking times depending on the size pot and quantity of gumbo you are making. Your stove can also affect the cooking times as well.

I was born and raised in NOLA and Charlie does authentic NOLA cooking. He is my 'go to' when I'm looking for a recipe. I have raised my 23 year old son by myself and one of our favorite weekend pastimes is to select a Chef Charlie Andrews video, go make groceries, and then build the recipe together. IMO, cooking and breaking bread together has been some of the greatest bonding experiences of father and son. Thanks Chef Charlie. We love ya brother.

Hi Charlie, I am a private chef and I was asked by clients to make a real Gumbo- I hardly new what it was until I started looking for a video to demystify it. I enjoyed watching your video very much- it was very clear, detailed, very well edited! and great sound. Was actually very nice and relaxing to watch you cook a dish you obviously know so well :) Then I followed the recipe and method (I made a huge pot) for more than 20 people. I was pretty spot on with everything but I left out the okra as per request. It really tasted amazingly great- and my guests were blown away by how good it was. Many thanks for taking the time and grace to share your knowledge. I'm also so happy to have learnt a new dish! :9 Bless

I made this gumbo yesterday to serve today for Thanksgiving and my husband absolutely loved it. I wish everyone could see the look on his face when he tasted all the concentrated flavors. He looked like he wanted to slam his fist on the table. This is not my first gumbo and my gumbo was good before but this one right here is the best I've ever made, the best video I've seen, and I know that the more I practice this method the better it will be. A couple tips for those thinking about making this quicker or easier...DON'T. It took me about 14 hours to make this gumbo and I would not do anything to cut down on the time. And I enjoyed every minute. -The shellfish and chicken broths are worth the wait -Boiling the seasonings and broths with the roux is worth the wait -Peeling and deveining head on tail on shrimp is worth the Labor -frying the sausage is worth it Etc This is not supposed to to be cheap or easy

I'm from Louisiana, I live right outside of New Orleans. Finding THIS video was PRICELESS! I made gumbo for the FIRST time ever this Christmas 12/25/2020 following this recipe and let me tell you...my family RAVED over it. We were ALL eating it like Charlie was at the end of the video LOL! This was & will ALWAY be a staple meal in my house. I made a few adjustments, like adding a can of Rotel, diced tomatoes & some chicken drummets. It was SO GOOD, my mother (who is very opinionated) has now designated ME to be the official Gumbo maker in the family...THAT'S A BIG HONOR coming from my mother! My husband and I fell in love with Gumbo when we had it at one of the finest steakhouses in Chicago. Last Christmas I decided to take a shot at making gumbo after my husband found your video. Let me tell you it knocked our socks off!!! I never thought I would be able to match a 5 star restaurant's food. The gumbo I made was so good we don't go there anymore, and your gumbo has been instituted as a family tradition. Every year I will make your gumbo for my family on Christmas Eve. I agree! And the quality of your ingredients are superb! I wish I had N.O. shrimp and crab like you have. Here in Indiana, USA I can get ok quality sea food but it will never be as fresh as you get and i will have to pay top dollar! After the pandemic settles down I’m coming to N.O. to get a bowl!

Great! Yes it does take a long time to prepare and cook! Preparing it is the hardest part. Make sure you prepare things early. Your roux can be prepared weeks or months in advanced. Your seasonings can be prepared 2 days in advanced before you cook your gumbo! Hope this helps! Thanks for commenting!

His cooking was practiced as an art and he taught me to look out for the basics in evaluating well prepared dishes. The way I’ve been using this recipe and this recipe ONLY for years! My husband is a summer baby but gumbo is his birthday meal every year. When family comes to visit, they say I better have my famous gumbo lol Thank you for all you do!

This is amazing I love your recipe this looks like the most authentic gumbo recipe I have seen..are there any substitutions I can use in place of the D&D smoked sausage and the hot sausage I live in NY state and we dont have those products here..we also dont have magic poultry or the gunbo spice..I really want to make this but i want to do it right..

Hey Charlie, I'm getting ready to make this recipe again today! It has become a tradition here in Vegas that when the first signs of Spring sprout up (before it gets too warm), we make gumbo, and bbq wings. I always use your recipes, particularly this Gumbo recipe because it's the best I've had. There are many "shortcut" ways to make Gumbo, which are okay if you want it, like, yesterday...but, the "old fashioned" way is still the best. I love the way you went through all the steps (and there are a few!) and ended with a Gumbo to Drool for.....Welcome back, Charlie...I missed you.

+Judith Loue Yes true. Their are too many shortcut ways. One of them is when they use all of those cans of high sodium chicken broth. Yes the Old Fashioned is the best. I make everything from scratch when it comes to making gumbo. Yes I had to go through ALL the steps so people can see how a real gumbo is made. You should see some of these video's on here with people CLAIMING they know how to make gumbo and they're taking shortcuts. My Gumbo is made the Old Fashioned way. The way most New Orleanians make their Gumbo. If i called my Aunt right now and told her i put canned chicken broth in my Gumbo, she would slap me LOLThank you

I have a love story about Gumbo. I met this amazing family out in California the couple was originally from New Orleans. They made some authentic Gumbo with all the fixings and that bowl of Gumbo I had or two lol 😂 I was blown away.I fell in love with Louisiana food. I felt at home and warm inside .I met a girl from a singing group from Changing Faces there such a down to earth family. But a girl from the islands started making Louisiana food. I made my first authentic red beans and rice recipe from that great family and I made it for my Polynesian family and it was a hit. They requesting me to make em again. I will make this Gumbo for sure. I need to visit New Orleans for the food and the Martiqua and the people so hospitable .On my list after this pandemic.

Charlie, I made your gumbo for my family for Memorial Day; I watched your video several times before hand, printed out the recipe, read and reread and took my time. EVERYONE said my gumbo was delicious and I owe it all to you! I followed your exact instructions as I spent way too much money and time on the ingredients to mess it up and went to several markets to find everything fresh as you stated. I didn't do the sausage balls but found everything else here in Los Angeles, Ca. Where I reside, at markets that carry Louisiana products here. Made everything from scratch and everything fresh. Ive said this alot of times but this man changed my life😂😂 foreal i was trying to imitate my favorite seafood pasta from my favorite restaurant n i watched more videos than i can count..but this man showed me how i can get my cream sauce to taste like crawfish..cuz at the restaurant you cna get a sode of extra cream sauce and it taste like crawfish even tho its just the sauce so he definitely helped me alot..other meals ive gotten from him too n his voice is jist the sweetest too❤❤❤

I must say that i LOVE your recipe. I tried it and I took the whole pot of gumbo to work and they absolutely loved it! I have a NO native that works with me, and she told me where to find the D&D sausage and the Patton's hot sausage links and patties here in Atlanta as well as the blue crabs. She said, "I'll only have a little bit of it because I don't know if you can pull it off like we do in NO"... She smelled it, and said, "This is EXACTLY the way gumbo is supposed to smell".... LOL Then, she tasted it, and said, "DAMN!, you did this"..., I followed your recipe to the T, and I will do it again with your video until I can do it on my own. I highly recommend your recipe! I was cooking and pausing and playing and rewinding this video at the same time LOL.. Much love my friend!

Charlie Andrews Charlie, if some people outside of New Orleans can't find New Orleans hot sausage, the old French name for New Orleans hot sausage is chaurice (shaw-reese). Maybe that may help them, I don't know. Anyway, the gumbo looks good. I make it like this style too and I also make creole gumbo with the diced tomatoes in it too(I'm a white New Orleans Creole, so most all my cooking is Creole style) so I make both styles, depending on what I feel like. Anyway, I'm from New Orleans too, born and raised. Keep up the good videos, bruh, keep that authentic New Orleans cuisine coming, I support that. Straight culture in the pot.

Charlie your dedication to this project really shows. I took a lot of time in the late 90's to find a good gumbo from the source, NOLA. The recipe you show is so good and would have saved me many hours back then working out the different family styles. I agree on the dark roux, No tomatoes and till now was a no Okra guy but your toasted Okra looks so good its going in my next batch. Again, thank you for all the work that goes into making these videos of your amazing dishes.

CHARLIE YOUR RECIPE HAS COME THROUGH FOR MY FAMILY ONCE AGAIN... Yesterday was my birthday and my daughter made your Gumbo for my B-day dinner and let me tell you something... BABEEE I LOVED IT. Now we don't have some of the sausages your recipe calls for so there were some substitutions but non the less my daughter put her ENTIRE FOOT in the preparation of this gumbo, it was so full of flavor, I wanted to bang on the table😁😂.
