Grains tend to pose a problem with a lot of people for many reasons. In this video, we learn how to solve one of those problems by soaking and fermenting oats to neutralize the phytates that bind up minerals like iron, magnesium, and phosphorus. Phytates are compounds in plants that inhibit mineral absorption, but when we trick the seed into germinating by soaking overnight, this releases those nutrients and makes them available to be used in the body rather than just passing through the digestive system unchanged. There are many ways to optimize your oatmeal, let's get started with step 1.

I always rinse my oats with a fine mesh strainer after soaking, then add 1 C. filtered water, then cook them.

If you don't have starters or an existing ferment simply add a couple of tablespoons of white cane vinegar and this will lower the ph assisting the start of a culture and activation of phytase

It neutralizes it, it doesn’t separate it into the food as far as I understand it. There fore it is safe to consume in its neutralized form.

Rinsing makes more sense to me. I wouldn't keep soak water from anything to consume... Beans, any of my microgreens seeds that I soak, etc.

When you soak whole grains and seeds discard the water because it is a germination process, the phytic acid goes into water If you soak crushed grains the water contains all the minerals and microorganisms have destroyed phytic acid so water is safe to be cooked with.

Sure you do. LOL The U.S. tap water is said to be safe also when the truth is it's extremely toxic. Government agencies lie through there teeth. No matter where you live.

Is there any evidence that adding the starter for this short time reduces the phytic acid by a significant amount (quantified) - otherwise this could be pure superstition or negligible reduction leaving 99% of the acid in there - thanks :)

Do you need to cook it? I'm looking at doing overnight oars with rolled oats and yogurt. Is 12 hours enough time to ferment?

Just refill your oats after eating them in the morning. If you take a portion of the soaked uncooked oats and add it to your next batch to soak this may help

Rolled oats won't sprout, they have been destroyed by oxygen once the kernel has been broken. I buy whole kernels and sprout them in a jar of water. You don't have to cook it, but you get better sprouting if you give it a few days. YOu can even hear them fermenting and the smell is just like a granary. Then you know you have a live food that hasn't been destroyed nutritionally. A bit crunchy, but so wholesome and bioavailable to your body which is most important.

Makes more sense to me too, otherwise cooking after fermenting will kill the good bacteria, surely ????

Cooking kills it. I buy hulled oat kernels which is the whole oat before it has been put thru a roller and flattened. Rolled oats are exposed to oxygen once rolled. I put the kernels in a jar and cover with an inch of water on the counter 'til next breakfast and replace each day at breakfast so they soak and sprout for 24 hours or so. You know you are getting the healthiest oats possible with minimal oxidation and denaturing. Rolled oats will NOT sprout no matter how long you soak them. The nutrient composition has been drastically compromised. Rapid oats are even worse! I sometimes let them sprout for several days and they smell like an actual granary which is a good thing. Hold the jar to your ear and you can hear them being active metabolically. Really cool and nutritionally more bioavailable.

There is more of a difference between the forms of oats you get. Fats in oats oxidise and oats contain antioxidants to protect against oxidation, breaking the oats will increase oxidation that can happen quite quickly. Buying oat groats will maintain the oat in the form that the plant evolved to mantain itself in for a longer period of time, whole grains have evolved to store themselves well, they haven't evolved to store themselves as a crushed grain because crushed grains will not grow

Gammy, Faye and Papa Al’s iPad I have lived this me years and never heard of this treatment. I guess you could say to eat a bowl of oatmeal. I grew up on a farm and our morning food breakfast was usually whatever was grown on the farm i.e. pork it would show upon the table as bacon, sausage or country, ham, and all the trimmings , eggs, and gravy. So once in a while, our mom would cook oats simply added water to dry oats, put in some salt, a little butter cooked until thick or done we would then add cream and sugar. That’s how I learned to cook them from my mother. She was also cooking for six kids, my dad and uncle John. Ace was not a favorite food. Then I learned to add some yummy items to the same cooked oats. Strawberries, banana, blueberries and walnuts,still milk and butter yes a sweetener, I liked brown sugar or maple syrup. I have watched nutritionalist on KZbin to learn about what happens in your stomach when you eat oats unless of course they’re cooked like I just watched this video. I would never eat them. It is too much effort for what I feel like I am getting. So I think I’m going to toss my oats out because oatmeal cookies are probably not good for you either with raisins and nuts, oh, this is just sad. However, all the comments seem to be in line with her thoughts. The only thing I could say in my defense is all the time I have eaten oatmeal I never knowingly had any digestive problems

Another tip is too slow cook oats in the oven for 1.5-2 hours, without soaking. Just pour oats in a 5-cup baking bowl 1/3 the way up. Next, pour in filtered water about 1/4-1/2 from the top. Bake on 325⁰-350⁰ for 1.5-2 hours. Check here and there.....

Yes, especially if slow cooked vs. quick cooking. which was understood way back in the late 1800's or so...... Small amounts may have an antioxidant affect too. "Plants store phosphorus in a compound known as phytic acid. Phytic acid can bind to other minerals, such as those mentioned above, and in doing so creates phytates. Our bodies do not have any enzymes capable of breaking down phytates, so we are unable to absorb those nutrients. However, by the time most of these foods get to our plate, they no longer contain enough phytates to cause problems. This is because sprouting, cooking, baking, processing, soaking, fermenting, and yeast leavening all help to destroy phytates. Since we typically don’t consume completely raw and unprocessed grains and legumes, by the time we consume these foods the amount of phytates remaining is considerably lower. I am dairy-free, so I will use some of the "juice" from my homemade sauerkraut. People who don't have any of those things can buy probiotics and open a capsule or two into the mix of oats and water.

But I assume they will ferment as per this video.....fermentation is what gets rid of the majority of the phytic acid. Soaking only gets rid of half of it. As a non-secretor, (Lewis antigen blood system - 25% of the population at large have this genetic variation) I risk major cavities if I eat any non fermented grain/bean, etc that still has phytic acid in it.

@@susannahfox7188 I like cooked oat groats/kernels after they've been soaked for a couple of days. They still have a bit of texture rather than turn to mush like rolled porridge. One must remember tho', they still are plants and plants have strategies against being eaten and to keep their babies (seeds) from being eaten. These phytates are one such chemical to dissuade you from eating them. The raison d’etre of all living organisms is to survive, thrive, and project their progeny into the future. Every organism must have a strategy against predation or they cannot survive let alone thrive. Fortunately for animals, they can fight back or run away. Plants are stationary but they are not powerless. They have developed sophisticated “Chemical Warfare” by producing phytic acid, but also endocrine disruptors, lectins, oxalates, pesticides, mineral chelators, carcinogens, digestion inhibitors, etc. to dissuade predators or kill them if possible. The lowly button mushroom produces 130 different carcinogens. Brussels Sprouts has even more. These plant chemicals are an adaptation against predators. No living thing wants to be eaten. Some plants will kill you in a matter of seconds, others, like cigarettes (tobacco plant) take decades. All plants are focused on their own survival and produce toxic chemicals which is why they still exist. Sprouting helps to nullify their survival strategy. Especially soak legumes for days and pressure cook them extensively. To put this into perspective, five raw kidney beans is enough to kill a person. All plants have toxic compounds. It's just a matter of degree and time. Long time, chronic exposure to these plant toxins may explain why few people reach our maximum life span of 120 years. Happy sprouting. J.

I used to eat raw oats everyday without soaking it in water for about 2 months. Used to get injured frequently. Got checked, i have vitamin d ,e, b12 deficiency. Now i have stopped eating oats. Took a break from my sport as i injured my leg(tenodn injury. Life is not good. Having extreme hairfall.

Phytic acid is no more there since it has been broken now into simpler compounds which now will not interfere with the nutrient absorption process since phytic acid was the one which binds with many nutrients and makes them unusable for the body.

​@@ctrtacoma02 Please explain to me what exactly is the chemical difference between trans fats in animal and trans fats from heating vegetable oils. From what I can see they are both trans fats. Regardless of where they come from they are consistently shown to cause worse health outcomes and are very much implicated in Neurodegeneration. Also just because we have been eating something in our past dosen't mean that it equals a positive health outcome. That should be obvious. Humans survived on whatever they could. While we were hunter gatherers we were also ape's for the largest part of our evolution. Ape's eat plants primarily. We are omnivorous. Regardless if you want to be healthy you need to focus on health outcome not "what we used to eat". We ate what we could to survive as a specie, not what would protect us from heart disease.
