Sesame seed to make ogiri can be boiled in a pressure cooker for 2 hour, and it cooks really soft. I am from Sierra Leone as well and I cook ogiri myself

Sesame seeds to make ogiri: very interesting. Definitely trying this one. Nothing beats our African foods.

I was just wondering if I could cook it in the pressure cooker. I have craved ogiri in my soups for sooo long and we don't have it in NZ. I'm doing to make so much.

Wow, interesting- ogiri is made from melon seeds in Nigeria. Most cultures have something fermented in their diet- its good for you

@sentoskitchen please is the oven supposed to be on continously for the whole week or you have to put it off and put it back on the next day? And how do you personally preserve for own? Thanks

After 30min of being in the oven ,you make sure to put the sesame seeds in a pillow case & tie it & make sure to wrap it with a lot of clothing’s that u don’t use & keep in a hot place & leaves for 2weeks but make sure to always check it every week to see how u want the smell & when done u can blend it with oil & salt . & put in the freezer …. This is what I do & it always come out good .

Thanks for sharing. But was a bit concerned about putting fabric in the oven, would it not set ablaze? Is the fabric fire proof?

My question is how do you store it after to preserve? Does it need to be frozen or can it sit in the refrigerator? Or just in a cupboard? II’m new to all this recipes. My bf is a Sierra Leonean & I feel I love the food more than him lol

Yes you can freeze its ,u can put it in a container but I prefer you tie them like this so its can be easy when u want to use it ,instead of container you gotta warm it up or struggle to cut some part ,but like this now it's easy to defrost in hot water before cooking it .

@@Sentoskitchen I left mine in the cupboard in a container. Without putting it in the fridge for almost two weeks it’s smells really bad. Is it spoilt? Or is that the normal smell and can I continue to use it to cook? Never cooked it before

Find an African shop and they'll sell it. A proper African shop owned by West Africans, they tend to fly the African produce in from their countries.

hello sento.is it ok for me to used pressure pot to do my ogir?i..cuz back in the days my mama used to boild it on the (fire stone)with woods and she will start early in the..like 6am and end 6:30pm..And it will take a long long time to boil and cook

No dear that's too much, it only takes 5 hours and it's cook. I am from sierraleone. And it's kept in the oven for a week.

You're right. I've seen my mum make this as well and I don't remember seeing her cooking the seeds for that long period of time. I definitely remember seeing her keeping it in the oven for a long time until it starts smelling up the house. lol!!!

Nar it really takes 2days, if you use pressure cooker then maybe 8hrs to a whole day, it depends on quality.
