Let's finish our Okinawa Soba! In this video, we cook the ribs and make the soup.沖縄そばを仕上げましょう!このビデオではソーキとスープの作り方を説明します。(日本語訳↓)
To make pork brine:
250ml Water
35g Salt
35g Brown sugar
Ginger slices
Green onion bottoms
750ml Cold water
1) Combine 250ml water, sugar, salt, ginger, green onion
2) Heat to dissolve sugar and salt
3) Add cold water to cool the brine quickly (alternatively, you could make the night before using the full litre of water and cool in the fridge)
To cook ribs:
500g Spare Ribs / Split Side Ribs
Brine from above
1L Water
1) Cut ribs into pieces - 1 bone per piece
2) Place ribs In brine and soak for 90 minutes in the fridge
3) Transfer everything to pot and bring to a boil
4) Skim and strain. Rinse ribs
5) Place ribs in a clean pot, and cover with 1L cold water
6) Bring to a boil and then simmer for 90 minutes, skimming if necessary
7) Remove ribs from liquid, and move to glaze to simmer 30 minutes (See below).
To make glaze:
150ml Soy sauce
75ml Mirin
75ml Awamori (Okinawan rice liquor - you can substitute sake)
75g Okinawan black sugar (you can substitute brown sugar, preferably demerara sugar)
1) Combine all ingredients and bring to a simmer, ensuring sugar is dissolved
To finish soup:
Spare rib cooking liquid (from above)
5g Bonito flakes
Pinch of salt
50ml Rib glaze (from above)
1) Bring spare rib liquid to a boil and add bonito flakes
2) Turn off heat and allow to stand for 10 minutes
3) Strain, discard bonito
4) Season with salt and rib glaze
To plate each portion:
160g Okinawa soba noodles
Large pot of boiling water
350ml Soup
Glazed spare ribs
Handful of red pickled ginger
Handful of sliced green onion
1) Cook noodles in boiling water for 2 minutes
2) Drain and place in bowl
3) Top with soup
4) Arrange ribs around the bowl
5) Garnish with ginger and green onions
6) Enjoy!

豚肉用ブライン液の作り方(お肉を美味しくしっとりさせます):
250ml 水
35g 塩
35g 黒砂糖
スライスした生姜適量
ネギの白い部分
750ml 冷水
1) 250mlの水に黒砂糖、塩、生姜、ネギを加えます
2熱して黒砂糖と塩を溶かします
3) 750mlの冷水を入れてブライン液を冷まします
ソーキ/リブの作り方:
500g スペアリブ
上の↑レシピのブライン液
1L 水
1) スペアリブを食べやすいサイズに切ります
2) ブライン液にリブを90分つけ冷蔵庫に入れます
3) ブライン液とリブを鍋に写し変え沸騰させます
4) 沸騰したらアクを取り、ブライン液を捨て、リブを軽く洗います
5) 綺麗な鍋にリブを入れ、1Lの冷水を入れます
6)鍋に入れたリブを90分間煮る、アクが出たら取り除いて下さい
7)煮たら鍋からリブ(ソーキ)を取り出し、タレで30分煮込みます(タレの作り方は↓)*鍋の液体はスープになるので捨てずに取っておきましょう!
ソーキ用タレの作り方:
150ml 醤油
75ml みりん
75ml 泡盛 (酒でもOK)
75g 黒糖(ブラウンシュガー、黒砂糖でもいいのですが、デメララ糖がお勧めです)
1) すべての材料を混ぜて黒砂糖が溶けるまで煮ます
スープの仕上げ:
ソーキを煮た時にとっておいたスープ(上↑ソーキの作り方にて)
5g 鰹節
塩少々
50ml ソーキ用のタレ
1) 取っておいたスープに鰹節を入れ沸騰させます
2) 火を止め10分間おきます
3) スープを濾して鰹節を取り除きます
4) 塩とソーキのタレで味を整えます
盛り付け:
160g 沖縄そばの麺
沸騰させたお湯(麺を茹でる用)
350ml スープ
ソーキ
紅生姜
ネギ 
1)沖縄そば麺を2分間茹でます
2) 湯を切り麺をボウルに入れます
3) スープを入れ
4) お好きなだけのソーキを入れ
5) 紅生姜とネギを好きなだけ入れたら
6) !完成!!!!!エンジョーーイ!

Thanks for the video! Attempting to make this for my kids to show them a little taste of what dad grew up eating. Question: you did not use konbu in your dashi. Was this intentional? Is it traditionally used in the recipe or no?
