The andagi should have a "smile" or a crack when prepared and cooked properly. Also, this is super good rolled in cinnamon and sugar after it is deep fried. Such a good video to share!

Can you exchange evap milk with regular milk?

You can if using whole milk. It's a 1 cup evaporated milk to 3/4 cup whole milk
