That's gonna be those dryed out tasting shoyu chickens sometimes you get. Then you start eating more of the mac salad to compensate knowing the mac ain't good for you. Cooking with the skin and bone in leaves a ton more flavor, softens the meat and makes it juicier and before serving, just remove the skin and bones if you want. People who know how to cook will prefer to see the skin and bone to know the meat will be juicy.

Don't understand how a fatty tail meat price went through the sky. An osso buco is just as tasty with the marrow in the bone to boot but their prices didn't skyrocket. Oxtail is fattier, takes longer to cook yet the taste and time and effort and price isn't worth the comparison to other beef sections. Some pieces are literally all fat. Same price.

I'm surprised it cooks well without binding the meat.. We normally use raw pork, mix and mash it with onions garlic and carrots, then add egg to bind the pork mixture so it will not break when fried.
