@@psychedelicvoyager9331 the flake size, kosher or "koshering salt" is what you use to make cured meats like deli style pastrami. Also it's purely American since in Europe they use "sea salt" which is a very fine flakey salt kinda like the kosher one, there's other categories like Malden salt and etc. , categories of sea salt based on the finesse of the grain .

Honestly adding hot oil and cooking in that oil using the oven isn't very different from just straight up frying them. Shallow frying would be about the same since we're really just cutting down how much oil gets used (parboiling the potatoes first is a goated move regardless tho)

You call that so much effort? In the last fry video I saw, the guy put them in the fridge while soaking the starch out, after parboiling, and after the first fry. A literal day of just cooling them for hours in between every step of the double fry for that Michelin quality

@@Aurelean42It is quite a lot of effort and or is also just really frustrating to do because of all the odd components. If you don’t have a big kitchen this can get really messy. Pouring the oil clumsily in the pan, taking them out while your oil is smoking and setting off the fire alarm all while making a big mess as you flip them in the oil, it all is just a bit much.

Ahhh so fry them in oil with the oven rather than the cook top. Look delicious but I cracked up when I saw the amount of oil. I think the whole idea with oven fries is a slightly healthier fry by skipping all the oil.

A less oily way to make this for everyone complaining in the comments about the amount of oil would be air frying or on convection setting using a double “fry” method, this way you don’t burn the fries because no oil but you still get the crunch

Ik everyone saying the whole point is not to use oil but I’m doing oven fries cause I’m lazy and scared of spilling hot oil in a pot 😂 so this actually my favorite way to make them also first time I made these they were the best fries I’ve ever had seriously. The second time I forgot what seasoning I used the first time so they weren’t as good but the crispiness u get with this technique is crazy!

From what I learned, most deep frying is done improperly which is why it is unhealthy. If done correctly the technique doesn't leave your food greasy and filled with oil. I can't remember or find the research I read on it a few years ago, but I remember being surprised at those conclusions.

What makes fried food unhealthy is not how it's fried; rather, the cheap, low quality seed oils (aka - vegetable oil or vegetable shortening) the food is fried in because it oxidizes in your system and therefore destroys your cells over time. That's why you always here him say he uses Avocado oil because it has a higher smoke point and does not go through a high heat/chemical process to extract the oil as do the others (cotton seed, palm, soybean, corn, canola, etc.) Animal fats however, such as tallow (rendered beef fat), lard (rendered pork fat) and schmaltz (rendered chicken fat), are perfectly safe and healthy to fry and consume. They have naturally higher smoke points and do no oxidize as easily as the commercial stuff.

I never understood why there was a need to low fry, then finish fry at a hotter temp. You can just boil them like this, then fry at the high temp. Essentially the oven fries here are shallow fried.

Don't fry your fries...let your oven fry them. It's like a shallow " fry daddy " and you have to triple rinse, par boil, and vinegar blanch them first? I just slice, rinse once under the tap in a colander, microwave for 1½ mins, butter each with spray butter & bake at 425°F for 12mins

For me the big problem with every way to make fries other than frying it takes way longer and it makes way less. You’d need half a dozen baking sheets and the oven to match to make fries for a dinner with a couple people over.

If you are just going to put that much oil in the baking pan just fry them instead. Why go through all that work heating up an oven? Maybe just rub the potatoes with some olive or avocado oil. Oh and the air fryer works best. For small batches.

I just use store brand frozen fries straight from the freezer, slather them with a coating of oil, place on an oiled cookie sheet, and bake for 25-35 minutes (total time depends on how dark you want them), turning them at least once.
