Pandan cake or we call it in Cambodian language "Nom Banh Duk". It is Cambodian traditional dessert. The cake is soft and chewy. We will have it with palm sugar syrup, coconut cream sauce and topping with roasted sesame seeds.
Ingredients:
To make pandan cake
1 cup [130g] Rice flour
1 cup [130g] Tapioca starch
3 cups [760ml] Pandan water
5 to 7 Pandan leaves
To make Palm sugar syrup
200g Palm sugar (add more or less)
3/4 cup and 1 Tablespoon [200ml] Water
1tsp Tapioca starch (add a little more if you want thicker syrup)
1/4tsp Salt
To make Coconut cream sauce
1 cup [250ml] Coconut milk
1 Tablespoon Sugar (optional)
1/4 tsp Salt
1tsp Tapioca starch (Add a little more if you want thicker coconut cream sauce)
White sesame seeds for to topping
