Being 100% Italian descent, I make Carbonara all the time, but I don't like the taste of either guancihale or pancetta in it so I use bacon. In addition, whether it's correct or not, like you, I can't imagine any Italian dish without onion and garlic.

@@MrMakeItHappen Hi there ! I make this dish all the time. Just wanted to say maybe next time you make it , add a half cup or a cup of good quality heavy whipping cream at the end . It will add such a nice depth of flavor. (Nutmeg )is good too . Tell me what you think ok.

If you put onion and garlic in it it is not pasta Carbonara I make pasta with garlic onion and bacon parma and egg all the time its lovely but it not carbonara. And the is OK....
