Liked your vid. My eyes started to well up when you mentioned how our parents used to do it. Both of mine are gone now, but I will always have those backyard BBQ memories. My dad was no chef by any stretch, but I learned & improved where he left off. Now I cook for my wife and son; and YES, leave out the technology especially when it comes to just doing simple chicken!

Good show! I cook it the opposite way. I put it over the indirect heat side for most of the cook. Then put my BBQ sauce on and move to direct heat. I like the BBQ sauce and skin crispy. A lot of good ways to do it!

I have the same grill, no fire box. After several attempts at chicken the way you set your coals, I started loading a #10 can with the ends cut off, leaving it there on the right side of the grill, contained. It burns for hours. 1/2 fill it for lower temps and add a piece or two every so often. cook from the shelf with 4 old red bricks on the cast iron to retain heat. remove the right side iron and place it in the middle between the bricks so you have access to the #10 can. * I use lump charcoal.

Mmmm..mmmm. that's right. Low tec. Good finger lickin chicken. No need for all the probs and other gadgets. The sight and smell of the meat is all you need. If the juices are clear then it s done. After that it's a matter of how juicy or dry you like it

how long is your charcoal good for though? if I wanna make steak chicken breast and salmon...im assuming I would put steak in direct heat, chicken breast in middle and salmon on far indirect side? I'm a novice griller but I'm wondering would I have to burn more charcoal after 2 hrs?

I actually cook my chicken breast over high heat as well to ensure no drying out. It doesn't take very long. Good charcoal can last up to 2 hrs, but if you are going longer you may need to add a fews coals throughout the cook.
