Ingredients (I know it's so basic but just to make it easier) 200g soft butter 450g sifted icing sugar 2 tablespoons of milk 1/2 teaspoon vanilla extract :)

Whats the different between vanilla essence and vanilla extract?

no one Vanilla extract is made from soaking vanilla pods in alcohol. It's a natural product. Vanilla essence is synthetic and in the amount you would need of it would make you're frosting or whatever to taste bad. :) Vanilla extract is the way to go :D

Thanks everyone! Even the people poo-pooing the unhealthiness of the cupcake. Cupcakes made from scratch using natural ingredients are not particularly unhealthy unless you eat a helluva a lot in one go! The odd treat every once in a while as part of a balanced diet, is unlikely to cause major damage. I hope you all have a go at this and get great results. If you have any questions, let me know and I'll try and answer them as best I can x

Soft butter is butter which is soft! As in, not fridge cold but squeezable. If you live in a not-too-hot country, leaving it out for a few hours or overnight should do the trick. It is entirely up to you whether you use salted or unsalted but I prefer unsalted, personally. x

what butters would you recommend to use? I think I need to get a stand mixer to see the difference from a hand mixer.

any butter aslong as its not margarine. margarine will make it sloppy

+Khanh Ngoc Tran If by "refined", you mean granulated white sugar, of course you can. It'll take a bit more whipping to dissolve, though. Run it through a food processor or blender to make the granules smaller so they'll dissolve quicker. (That's called "caster" or "superfine" sugar, and it's the best kind for frostings and meringues.) :)

tried this yesterday and OH MY GOD its amazing!! the best buttercream i have ever tasted!! thank you soo much for this tutorial :) I used half the mixture i made on 12 normal size cupcakes so i'm guessing it would do 24 although i suppose it depends on what icing technique you are using as to how much icing you use per cupcake..

I've used this recipe several times and it is always perfect. Today I substituted a homemade strawberry puree reduction for the milk and strawberry flavoring for the vanilla. It made delicious strawberry buttercream frosting.

I made the cupcakes from Jemma's recipe as well as this buttercream. Best bakes ever and will stick with this recipe for my 50th birthday. So easy. So fluffy. And it went down a treat. Thanks Jemma. Love everything you do!

Yeah! Do that! I just made my cousin's chocolate orange wedding cake and filled it with orange buttercream. For the quantities in the video I used the zest of one orange and then replaced the milk with freshly squeezed OJ. It ruled! The whole cake smelled like a Jaffa Cake!

We use that buttercream to pipe with. As long as your butter wasn't too soft or too firm when you make the icing, it's pretty great for all methods!

Just made this recipe but with coconut cream instead of milk. It was fabulous! Whipping the buttercream for so long made it so light! I used to always make buttercream really quickly but I have seen the light! Thanks!

Yes! There is definitely a connection! your butter should ideally be soft and squeezable but not sloppy or runny or messy. If you were to stick your finger in it, your finger should not come away dripping in butter! It needs to have some body to it if it is going to whip up to that nice pale and fluffy consistency. Try and make it in a cool place! If your kitchen is hot then don't leave your butter out softening for half the day or it will get too soft. Experiment and have fun!

I have always found that with Silver Spoon. I always use Tate & Lyle icing sugar but also Billingtons golden icing sugar is pretty good, though it won't go very white

...also it's really multiplyable! It works just as well scaled up, just mix it for a bit longer at each stage if you want to make more

I would recommend keeping it stored in an airtight container at a cool room temperature which, if you're in London right now like I am, can be tricky. The fridge is ok if you you want to keep it for a while before you get around to using it. Because of the butter content, it will become too hard to use straight away after being in the fridge for a bit. If you want to do that though, just make sure you take out your buttercream an hour or so before using it so that it can become soft again.

Some brands of icing sugar aren't as fine as others. For example, I used to have this problem when I worked with Silver Spoon icing sugar. I could never seem to get the graininess to go away. Tate and Lyle is what we use and I never have this problem any more but it is true that the longer it whips up for, the more the 'grains' dissolve. Assuming you are sifting your sugar before using it as well.

I was hoping no one would notice! Basically I have permanently got splodges of food colouring on my hands. Like ALL THE TIME. Cos my hands get so dry from all the washing up I do, it just gets right in there and doesn't come off for ages! I can assure you I am very clean. I wash my hands about 30 times a day (hence the dryness!)

Here in Australia (and I think also in the UK) you can buy pure icing sugar or icing mixture and it is only the mixture that has the cornflour, but both are referred to as icing sugar, just to be confusing! Either would work in this recipe I am sure.

Thanks for showing how to properly put this stuff on the cupcakes, I already knew how to make it, but when I've made it before but my cupcakes looked like a mess, your method seems way easier.

I could hand ice 2 dozen standard cupcakes using the method in the video. Piping them uses a bit more so maybe 1 to 1.5 dozen, depending on how heavy you go. x

You can try! Might get a little melty. When I want to get smoky flavours, I use Lapsang Souchong tea! Works a treat. But you don't get to haul out your massive smoker, soz

I know it's very vogue to use a wide aperture/small depth of field, but it means that important things are regularly not in focus. Especially if the camerman cannot consistently and accurately manual focus! Small detail I know, but it's bugging me a bit... LOVE the recipe. LOVE the new girl. LOVE FoodTube! DFTBA

Sorry for the delay! I would never put a cupcake in the fridge. Fridges dry cake out. Unless you are making a cake with fresh fruit and/or cream, there isn't much need to refrigerate a cupcake. If you live in a very hot country just keep your cakes in the coolest place which ISN'T a fridge! Cakes taste really good when they are room temperature!

you could sift the sugar or leave it in the mixer longer.. adding milk to it will make it smoother as well :)

Anyone wondering about Cream Cheese as an addition, if you add cream cheese it is no longer Buttercream in it's truest form. It has now become Cream Cheese Frosting. You may notice that adding cream cheese to buttercream or adding icing sugar to cream cheese makes things a little runny. Don't ask me about the chemistry but somehow the sugar breaks down the structure of the cheese so you will have to keep adding sugar until it thickens up a bit, meaning, sometimes, that your icing is mega-sweet.

It is made by Kenwood which is a British company. Their machines are very good quality and extremely reliable. If you can get hold of one in the US I would. Kitchen Aid, Schmitchen Aid!
