i made my meringues by hand. Took me 1 hour. my hand mixer wasnt working so i decided to make them by hand. hand was sore afterwards but it was worth it. they are so yummy!

Hi everyone. Just wanted to give some people a alternative way to make these with liquid food colouring. I made these just now, i only have liquid colouring, so what i did is take some of the white mix and then add food colouring to the small amount of mix, and just make it darker than you normally would so that the colour shows up after they bake. Works just as well to get a similar effect of different colours.

There is another method too, mix the liquid colouring with a little bit of icing sugar, it will turn it into a paste!

If you want to be sure not to get any yolk in your egg whites, then crack the egg out on a plate, use an empty soda bottle to suck up the yolk, place something flat under it (like a frosting spatula) to make sure the yolk doesn't fall out, and move it to another plate or bowl. This way, you're sure to remove all the yolk, it's a lot easier, takes less time, and is even safer since the outside egg shell has a higher chance of containing diseases.

I’ve heard about crack in meringues before. Some bakers recommend cooking them, but not removing from the oven. So when they are done, turn oven off, leave the door cracked with a dish towel and let the meringues cool down slowly in the oven.

Maybe crack each egg white into a separate bowl before adding to the mixing bowl. Yes, it's an obvious solution to those of us who know the science of making Meringues, but a simple tip for beginners or those using their parents ingredients because let's face it, we'd soon get fed up with losing a dozen eggs to a recipe that calls for 6. Great video. :)

You can also crack the eggs when they are cold. Then the egg-yolks will hold better. (If you do it, make sure you let the egg-whites become room-temperature before you whip them. If they still are cold, they won't reach their full "potential"!)

Yes... Never crack your eggs on the edge of your mixing bowl. Use a separate bowl every time. Ensures no shells, etc

I made this and it turns out amazing! i just use yellow color on the both side, reduce some sugar, add some of lemon zest, and sprinkled it with my sprinkle. it become cuteeee! someday i'll put it on my pastel-color layer cake for the decoration

What Jemma failed to say (but totally should have) is don't crack the eggs straight into the mixing bowl, break them into a bowl or cup so then if you get some yolk in them you won't need to throw away a whole batch of whites

Hi CupcakeJemma! CupcakeJemma I need some advice with making these meringues! I have a tiny oven that can make probably only nine 2-inch cookies at a time (thaaat tiny), and I have 4 left over egg whites from a previous recipe to make into meringues. Will the extra meringue mixture be okay while waiting for the first batches to bake (if I make them all in one go)? Or should I just make them in tiny batches while the previous one is baking? Thank you!!

jish doon you absolutely need a scale because the weight of the sugar is the double of the egg weight. Meringue can be extremely easy if you weight everything precisely!

You don't need scales for meringues. Simply use three egg whites to a standard mug of sugar. Add a drop oh white wine vinegar, and a splash of vanilla extract. Whisk until stiff, probably ten minutes on a high mix.

I get the same rainbow effect bye ha feeling my piping bag couple drops of food colouring down the side using a chopstick lightly poking pushing the colours down the side of the bag give the chopstick a nice big twist as you pull it out repeating this with 4 colours you get a desired look

A little tip I know: when making meringues and using a hand whisk, don't allow the hand whisk to touch the bottom of the bowl when whipping the egg whites.

my meringue is dry and conpletely pulled off from the tray, I baked them around 45-60 mins. But why when a couple minutes off from the oven the top of the meringue is sticky to my fingers, like melting sugar. Is it because of the humidity in Indonesia?

Also its best to keep them in the oven for about 30 min (when they are ready and the oven is turned off) to rest so they dont crack from the sudden cold air
