Custard Danish Pastry
4 servings
Frozen puff pastry 4 sheets (10x10cm)
- Custard Cream
Milk 135ml
Sugar 20g
Vanilla extract 1/2 tsp
Egg yolk 1
Cornstarch 10g
1. Leave the frozen pastry at room temperature for about 15-20 minutes. When the pastry becomes easy to handle with, make a shape. Cover the top and let it proof in a warm place for about 1 to an hour and a half.
2. Prepare the custard cream. Put milk (90ml), sugar, and vanilla extract in a saucepan and heat lightly over medium heat until steaming.
3. In a clean bowl, combine the remaining milk (45ml), egg yolk and cornstarch. Slowly add the heated milk mixture in and mix.
4. Return the mix to the saucepan and heat it over medium heat. Continue stirring with a whisk without stopping until the consistency becomes thick. Put it in a container, close the top well and then allow it to cool at room temperature.
5. Put the custard cream on top of the dough. Bake in an oven preheated to 180 ℃ (356℉) for about 10-13 minutes.
