I don’t know why I was so afraid of hollandaise. I decided to try some hack recipes and they never worked. Now that Thomas has helped me build my confidence once again I'll be making hollandaise this way from now on!

Just curious…. When you say Sally Ann, are you speaking of Salvation Army? That’s what my mom used to call it. I’d never heard it referred to it like that anywhere else.

This is an awesome way to make hollandaise. Back in culinary school we used a vinegar reduction with charlottes in our sauce.

My Top Secret Favorite breakfast dish is one I NEVER make for myself (and I’m an avid home cook!): eggs benedict. The reason I’ve spent years ordering it at restaurants while never cooking it at home is because I’m TERRIFIED of attempting a hollandaise sauce. Your tutorial made it look so doable though!!! I feel invigorated! I have some awesome ciabatta buns at home that I cannot WAIT to top with a delicious poached egg and pan seared tomato and this gorgeous sauce! Thanks for the recipe! ❤

Yes, you can make in advance/a couple of hours (at the most) holding at room temperature is fine. Reheat in a glass bowl over boiling water while whisking.

For occasional use, heat a Styrofoam cup with a splash of the boiling water & hold the sauce in the cup. For frequent use, use a small vacuum cup instead of the Styrofoam cup.

ok this may sound crazy but im in school but was thinking of how to boom up a cheap meal and wondering if its possible to make a hollandaise sauce that i can drizzle over fries.. i figure make the sauce with a cheese to make a cream add diced spam cause you know "dollar tree " and some diced chives. what do you think and how would you change it up as for the cheese not sure but thought id swap cheddar for gruyere, halloumi or goat cheese sprinkled with a lil nutmeg..

People have been commenting on this for literally years: the audio mixing on Thomas Joseph’s videos needs work. The intro music, and then the ambient noise, overwhelm his voice. Other presenters on this channel don’t seem to get the same treatment... 🤔
