Hi Thomas! I've made this many times as per your recipe and method and have been successful. Today, in a pinch, I only had heavy cream. Always on low to medium heat, somehow my pastry cream split. Yikes! But I found a solution... Sit the pot in a bowl of cold water and whisk vigorously, and I mean vigorously, to break a sweat vigorously, for about two or three, maybe five minutes. It came together miraculously. Just thought I'd share with you and others in case they ran into the same situation. Much gratitude for all your tricks, tips, and recipes. 'Luv 'ya.

Actually gelatin sets down at room temperature as well. I just needs way more time this way. How do I know? My grandma was cold-phobic and everything that came straight from a fridge in her mind could cause instant illness. So she mixed gellatin with boiling hot water and... waited. Sure enough, the gelatin settled. Also you can see this happening if you make a really thick, boiled for long time broth and, let's say, leave the pot overnight forgetting to clean it - the leftover broth can settle.

dry 3cup wholewheat flour 2 teasp baking power 1 teasp salt wet 4 eggs 3 1/2cup whole milk 1/2cup olive oil 2teasp vanilla extract 1/4cup sugar 1/2teasp baking soda 1 mix the wet one with the dry ingredients 2 pour the batter in the waffle maker and wait for 6 mins

There's always the option of the old fashioned ice cream machine that uses ice and salt to freeze the ice cream mixture in both a hand cranked and motorized model. The hand crank one can be a good idea for people that have kids they can all take a turn cranking the machine. The old fashioned machines can also be found in a variety of capacities I've seen them up to a 4 quart capacity.
