How to Make Perfect Roast Potatoes

These are the ultimate roasties. Not a single one of us could stop eating them - and we made three batches. They will make a perfect accompaniment to your roast dinner!
Ingredients
1.5 kg Maris Piper potatoes
1.5 tbsp sea salt (for the water)
4 tablespoons olive oil
1.5 tbsp sea salt
2 tsp freshly ground black pepper
1 bulb of garlic (broken into cloves)
4 sprigs fresh rosemary
2 sprigs fresh sage
10 sprigs fresh thyme (approx)
2 fresh bay leaves
Method:
1. Preheat the oven to 220ºC. Peel the potatoes and place them in a bowl of cold water (this will help get rid of the excess starch and aid the cooking process).
2. Drain the potatoes and tip them into a large pot. Cover the potatoes with cold water, add 1.5 tbsp of sea salt, put the pan on the stove and bring the water to the boil. Once the water is boiling, set a timer for 8 minutes. When the timer goes off, pour the potatoes into a colander and drain off the water. Leave the potatoes to steam dry for 5 minutes
3. Pick up the colander and shake the potatoes to “chuff” them. Shake the potatoes until their sides are rough (these rough edges will give you a perfect, crunchy crust). Tip the potatoes into large tray (making sure they have a bit of room to move and they’re not touching. Pour the olive oil over the potatoes, sprinkle over the salt and then turn the potatoes with a pair of tongs, making sure they’re all well covered in oil and seasoning
4. Put the potatoes in the oven and roast them for 30 minutes. Take the potatoes out of the oven and add the garlic, sage, thyme and rosemary. Use tongs to turn the potatoes so they’re well covered in flavour, oil and seasoning. Put the potatoes back in the oven and roast them for a further 40 minutes until the skins are incredibly crispy and and a deep, gold colour.
5. Take the potatoes out of the oven and put them on a plate covered with kitchen paper to drain off excess oil. Serve alongside a full roast and all the trimmings!

It NEVER occurred to me that the 'fluffy bit' on the outside of the potato after boiling is what will make them crispy when baked! I've always been careful to NOT let the fluffy bit fall away. Now, Bosh darn it, I know better!!! Thank again, guys!

A quick one for a little extra flavour put some Rosemary, Thyme, Garlic and Oil (not too much) in a mortar and pestle and grind until the herbs are flakey lightly cook until aromatic then add to the rest of your Oil

Those look tasty, but would it work with less oil? I haven't been eating hardly any for a while now.

Hey there, thanks Lauren! Yeah these would totally work with less oil. You could probably reduce to about 2-3 tablespoons and still get a tasty potato, just less crispy and roasted on the outside, but still soft to bit. You might want to increase the herbs and flavouring slightly too.

@@BOSHTV I made these, half with "pam" spray and half with just a tiny bit of olive oil, both turned out great. The spray ones had a little less crisp but still one of the better potatoes I've made so totally doable with very little oil.

Would Russet potatoes be a good substitute for the Maris Pipers?

Hey!!! Russet potatoes are not as good as they are more waxy. Waxy potatoes do not go as fluffy. You want a floury potato. Maybe something like a King Edward potato would be good instead. You could try Kind Edward, Desiree or Estima

Those varieties aren't readily available in Canada. I find Yukon Golds quite floury, and older white potatoes as well.

doesnt olive oil usually turn carcinogenic after heating it above 180d celcius ?

Not systematically, it becomes carcinogenic when the heat is so high it let out smoke

Maris Piper (I had to check the recipe, because I had no idea what they were saying). I googled a bit, and Russet potatoes are probably a good substitute for those of us in North America.
