So once the mixing is complete you then immediately divide and ball then cross stack while oiling up and let sit for at least two hours at room temperature to let it get a little fermentation on it then into the cooler for a 45 minute to hour and a half at 38 to 42 degrees Fahrenheit then after that short cross stacked period stack them normal for an additional 12 hours? That portion getting the order to do things is slightly confusing can I ask for some clarification please.
