with the docker, will it leave an edge so that you can have a risen edge? could these be used for a NY type dough

It leaves a 1/2 inch of undocked edge if you use the correct-size plate. (As you can see from the number if off-center, over-sized pies oozing out from the presses in his demos, and the excess amount of docked dough on his docking press, he's often using too much dough here.)
