I was dying to make this ever since I saw the video! It is delicious!!! I did change a few things. Traditionally, where I'm from, we clean the meat w/lime, then rinse & marinate w/a green seasoning. I then cooked, drained & fried them. Also the plantains. I used the liquid I drained from the meat for the sauce instead of the blended tomato. I did add tomato paste, sliced onions, & diced sweet peppers. I cooked it the rest of the way as you did. I will definetely be making this again!
