If you don't have the Fat Separator Step 1- Add entire contents of beef stock into a medium sized container and let sit for 5 minutes. This will allow the fat to float to the surface of the beef stock. Place into fridge or freezer until the fat hardens. Step 2- Remove fat from top of beef stock with a fork and place into a separate small bowl. Place into the microwave on high for 1 minute or until the fat melts. You should have 1/4 cup fat altogether.

Williams Katrina Heyy! You can serve it with mashed potatoes or rice. Some kinda starch will work then you can add the green peas, green beans, yams and potato salad as the sides.

My grandma used to make beef roasts in the oven like this with the garlic stuffed into the slits. I don't like traditional pot roast on the stove with the carrots and onions, but this kind of roast is the best! That gravy is so delicious. This is perfect for summer too and now I don't have to heat up the kitchen. Thanks Charlie!

Charlie, I just finished watching your beef roast video. I enjoy watching your cooking videos so much. Your cooking videos has brought me back to the days when I was little and use to go to my grandmother's house every Thursday, that is the day she had off from working, and she and my uncle would make those great southern meals. I am 79 years old now, and I am sitting here with tears in my eyes thinking about it. I am ordering a slow cooker and cannot wait to try this recipe. I also made some cooking videos years ago with my cell phone, but those videos are certainly not as good as yours. I did not have a pause on my phone so all I could share was the before and after of my cooking. Looks yummy Charlie! I made one this past week in the pressure cooker. I cook it on a bed of radishes so that the roast doesn't stick to the bottom of the pot and I add a couple cups of water and a packet of Knorr's beefy onion soup. Done in about an hour. Love your recipe but I just can't wait all day for the slow cooker to do its job.

Charlie my man my brother from another mother. You are so right. The roast doesn't come alive unless you stuff it with garlic. Mom taught me how to cook it slow until it wasn't tough and practically melted in your mouth and now I have a problem. Whenever the word gets out to my children and their wives that I'm cooking roast everybody and their dog comes to my house and I have to cook two. But it's all good I'm glad they enjoy it. Chef, I made me a pot roast and used most of the ingredients you used, only I didn't have the Chef Paul Prodhomme's poultry magic, or the beef base. I kinda improvised with some Worcestershire (wur-ster-sheere) sauce and poultry seasoning. I made the roux, came out great, and I cooked mine in my slow cooker for 7 hours....baaaaby let me tell u that roast was FIRE! I banged my table about 18 times cos it was so good!!! Thank you Chef Charlie for this awesome roast recipe!!! Hopefully I'll have the Poultry Magic and Better than Bouillon base real soon from Amazon!!! Much love from Chicago!!!!🥰🥰🥰🥰🥰

Mashed potatoes because you can use that delicious gravy on them. Also, green beans, brussel sprouts,Mac and cheese, or corn. Any combo of those sides.plus some brown and serve rolls or biscuits to sop up that gravy left on the plate. Good luck!
