I love potato pancakes and had not had any for years. We moved south. We went to a Perkins restaurant and I saw "potato pancakes" a new item on the menu. I thought I would try those. The waitress brought those to the table and I took a bite. I told her those taste like hash browns. Her reply was "they are, we just mix them together and fry them." I was very disappointed and did not finish eating. My polish grandmother made wonderful potato pancakes. I should have known better, when we first moved south I ordered spaghetti for the kids; they received noodles with tomato soup for sauce. I ordered a hot dog and they brought it to me blackened and fried on a bun. I sure miss the good food choices we had in Chicago. I am going to use your recipe for stuffed cabbage, thank you for posting this video.

My mom makes them little differently, just blend raw peeled potatoes with onions, add a bit of flour, salt and pepper and then fry it on a pan. Makes it easier and just as tasty.

yep, or you can grate it very finely on grater. It's a pain in the ass to do it for many placki's but they taste smooth. Then you can make some mushroom sauce from champignons and boom - it's like my mother's placki ziemniaczane

I don't remember the exact recipe, although I have it written down somewhere, but I do know it used raw, grated potatoes. We used a food processor. You could hand grate, but if you don't have a food processor or blender, cooking the potatoes first might be a better option.

Good video. My mother used to make them when I was growing up and I loved them. We always had them plain with a side of ‘buttermilk’ but the buttermilk was served in a bowl as a cold soup with salt and pepper. I loved it and I need to make them soon. It was such a good combination that I don’t think I could ever change. True Polish guy with the beer, haha. Thanks for sharing.

I just found your channel!! My grandma was from Poland and as a kid in the late 50's & 60's in Buffalo NY, I watched her making potato pancakes, Cabbage Rolls - Gołąbki, polish sausage and pirogi's. She never used parsley and I suppose that's the same as: Q: What's the best spaghetti sauce? A: The one Mama used to make! I'm looking forward to exploring your channel as I want to make the same polish sausage she made that I grew up with. I remember her saying, pork butt, garlic, salt, pepper and all spice...I think its all spice, I'm not so sure now, its been such a long time... :)

My grandmother made the absolute best polish sausage from scratch, she would grind the meat by hand, add all her spices and what amazed me she would always taste the raw meat for flavor, she would work with 70 and 80 pounds of meat at a time, as a child I would turn the grinder attached to the table and also blow the casings for holes, my lips would get raw from all the salt, but that first ring of sausage that came out of the pressure cooker??? Pure heaven. Have never had the same since she's gone but beautiful memories

I made some of these for my local church. Everyone loved them. I make them the way my mom used to with grated raw potatoes and ordinary onion. My father was Polish so he passed the recipe on to her. Mom was English. I love these pancakes cold too: in fact they taste better cold.Great with a mixture of grated cheese and grated carrot. Loved the video though!

This is a nice way to make. I have always used cheese clothe to seperate starch from raw russet. Drain the starch water, use settled starch back in with shredded potatoes then add egg and spices. I love the green onion, parsley. Use sour cream and apple sauce dollops. So delicious.

She never let me help her make anything so I had to watch and I did. Latkes ... but we makes them with grated raw potato, egg, onions. Yum. PS You keep the grated potatoes in water till ready to use. Squeeze the water out of the potatoes VERY well. Discard the water but keep the starch that settles to the bottom. Add that back into the potatoes, onion and egg mixture.

I was so happy to find the Polish chef, but sad to see he hasn't posted any videos in a year. After reading some of the comments I can see why. Accusations of not being a Polish recipe or being Polish Himself is plain horrible! There is not only one way of making a dish, if there was life would be very bland. I don't care where you are from if you're proud of being Polish and of Poland then your a Pole in my eyes. Thank you very much Polish chef! Byłem bardzo szczęśliwy, że znajdę polski szef kuchni, ale smutno, że nie wystąpił żadnych filmów w ciągu roku. Po przeczytaniu niektórych komentarzy mogę zobaczyć dlaczego. Try using UNCOOKED grated raw potatoes, add grated onion, garlic, egg, flour, salt, pepper, and cook in Crisco for some amazing flavor. No parsley.

You ate the evidence! lol, can't help but think of that movie when I see this, and another of my favorites that mum made, and we didn't pay attention to what she did..because we thought she would always be here to make them for us. She would also leave some of the crispy bits in the pan, then make a nice omelet that they formed themselves into..then we would all try for the part of it that had the most! But I can't get enough of pancakes, and thank you very much for sharing the making of them with us ;)

I am half Polish and my mother would make these when I lived at home, I never could get a recipe from her for either potato pancakes or pierogi. She would laugh and tell me it was a little of this and a little of that.I never got her recipe. I followed your video for potato pancakes with the exception of parsley and they tasted just like Mom used to make. Thank you for helping me relive those days!! I don't know if I missed it or if it was excluded but how many potatoes are needed for how many servings? I grated two large russet potatoes for my wife and I . I made enough for 4 to 5 people!! Can someone tell me if I can refrigerate or freeze the pancake mix because I made enough for another meal!! Pierogis will be next on my list!!

Never freeze potato pancakes. You just don't freeze it. . . This is a cheap and quick recipe that can be made in a few minutes and you can eat fresh. My husband eats it before I can fry them all. kzbin.info/www/bejne/bGTCm52pmsp3gNU I chose a similar recipe, which I do but I grate potatoes on fine meshes on a regular grater. Ana's pancakes came out too thick. Because she shredded the potatoes in the processor too much. They did not grow as they should. I suggest you add 2 eggs and not too much flour. I never extract the juice of potatoes. The juice will add crunchiness to the pancakes. The added flour will thicken it. I grate the onion and chop the other half with a knife. It also adds a little chopped dill or it can be dry. Fry in normal oil. The best potatoes for pancakes are Idaho or Yukon. Have a nice day and good luck.

Yes. We were Polish & only ate them with applesauce. My husband is a Polish Jew & he eats them with sour cream. My daughter always thought they were like hash browns (we like them crispy around the edges) so she ate them with ketchup. I even luv them plain. Every year we go to the Polish Festival & eat like pigs. But don't worry, we dance it off. It's a three day party, much like a Polish wedding.

We used to make this exact recipe in Poland, but didn't precook the potatoes. We grated them raw, and squeezed out the water. I need to try this recipe to see if they are better!

Interesting... here in New Zealand, I've cooked "mock whitebait fritters" with grated potato, only difference seems to be that your potatoes are partly cooked first, and you also have greens in it as well.

I have never seen this method. I am used to finely gating raw potatoes, onion and the rest is about the same, no parsely or scallions. Your method looks very good, but looks more like hash browns than pancakes.
