This is a good demonstration and method. I've made Pommes Anna many times with good results. Why is this method especially good? Because it shows you can make a delicious side, at individual serving sizes without so much fat. Fat is OK if used well, but too much is too much. Well done, sir.

Totally agree. I'm amazed at the number of chefs who blithely ignore the horrid and unsightly black areas in and on potatoes. They turn my stomach.

1st You dont have to peal the potatoes 2nd Use a mandolline 3rd Cut them out with a round cutter. 4th I just saved you 20 minutes.

These look tasty, but it's not Pommes Anna. Pommes Anna is fried before baking, and is a pressed "cake" of potatoes.

Thanks for your comment!b It's Pommes Anna. I don't think there are any hard and fast rules here. The techniques create essentially the same product. The baking makes it easier, too.

True; but that's because most people don't know what Pommes Anna are, and could only go by what they are told. Foisting a poor imitation on an ignorant public doesn't make equal authenticity.

I've seen the culinary institute of America pan fry them, flip them, and finish them in the oven. Especially in a restaurant, preparing them for service would certainly dictate some level of pre-cooking, with an oven finish. Unless you can cite a source that unequivocally states that they must be completed from start to finish in a pan, I think it's likely a matter of opinion. Your opinion that these are a poor imitation because they were cooked in the oven is, of course, your opinion; but certainly not a fact. Further, the contention that only the ignorant public would not be able to tell the difference as to whether these were done in a pan or an oven, is also a notion that is implausible. Some may be able to tell, but those that can't wouldn't be considered ignorant. Finally, to chide a person for their product due to your opinion that they must be pan fried, is a bit uncalled for in this context.

Vegan???? WTF? If you can’t/won’t eat this normally, then don’t eat it! Dude, use more salt, they’re potatoes they absorb a lot of salt.

Looks delicious but I always rinse my potatoes after peeling them. Never know what they've been in contact with before you purchase them
