I also use two different curries. One hot, one mild. I use pork as that was what my Mom made it with when i was a child. Great video! This is truly Japanese comfort food!

I made your recipe tonight and while I was drooling at the smell my wife and kids actually LOVED it! I've never cooked the kids curry before because I didn't want to spend 4 hours in the kitchen just to hear them complain about it but they ate it!

I’d been looking for a Japanese curry recipe that doesn’t use store-bought roux for over 5 years. I’m super excited that I finally found it! I used stewed beef, seared it first and pressure cooked 35 minutes. Other than that, I just followed your recipe. Tada! It became super delicious beef curry 🍛 Arigato gozaimasu! I love that you are teaching us how to make great Japanese dishes! There is nothing like this on the food channels and I've been looking for great recipes for so long. I also love the children at the end saying itadakimasu! Please add those in all of your future posts! I am yonsei generation and only know a few words and sayings in Japanese unfortunately. We did used to say this before our meals, but when I was little used to say Thank You Mas! I wondered why we were thanking him....

I made this curry and it came out nice. Children loved it. I learnt two things though which I would like to share. Don't add curry cubes like shown at 3:10 the problem is even after 15 minutes of pressure cooker the curry cubes will not disolve fully so you will have lumps. I think it's better to dissolve the curry cubes in the chicken stock first and then add it to the curry. Second thing is be careful of the salt because the curry cubes have salt in them. Chicken stock also has salt in it and the ketchup and soy added in the end also has salt in it. After making the curry I felt that it had a little bit more salt than my comfort zone. I guess next time when I make this dish I'll make sure to use unsalted chicken broth.

I agree. It was too much for me. Tried it for the first time tonight. Do you think I can omit the ketchup and soy next time? I used low sodium soy sauce and still very salty.

I love Japanese curry and prefer it to other recipes. Try peeling an Apple then grating it into the sauce for added flavor. Red for sweetness or green for a tart flavor!

I use the Golden Curry and substitute tofu for the protein. It's really good. Add the tofu at the end and let sit for no less than 5 minutes. It's tasty.

Sooooo good. This recipe is great! No guess work in the seasoning, and the instant pot just makes all the veggies delicious. I wanted to do curry with chicken Katsu, as that is my favorite, and I really love this recipe because of the chicken broth! I can cook the curry separately from the chicken Katsu but still have that a chicken favor to the curry itself thanks to the chicken broth. This is going in the usual rotation of meals cooked regularly! Thank you so much for this fantastic instant pot recipe!

Oishi!!! I was first introduced to Japanese curry over 35 years ago in the food court of a Japanese department store. Ever since then, it has become my favorite type of curry. Your recipe is simple and looks delicious indeed. I will have to try it in my instant pot....now...off to the Asian market for curry cubes and rice! Arigato!

I just made this but a heavily altered one. I tried to make it sort of one serving but it turned out to be two. I used 1 yellow onion, 2 rainbow carrots- one reg size, A handful of boomer gold tiny potatoes, 2 garlic 2 cups of veggie broth, And one Hot golden curry mix (3.2oz) I didn't add meat but it's so tasty and rich. Maybe I should have used a little less of the curry because all the flavor! The "hot" flavor i don't notice it at all. A single slice of jalapeno is twice as hot as this. THANKS FOR THE RECIPE ;)
