Vietnamese Desert-Sweet Potato Sticky Rice Balls In Ginger Syrup
Filling:
150g of mung beans
300ml of water
100ml of coconut milk
45g of sugar
1/4 teaspoon of salt
Green onions (6g)
Ginger Syrup:
800ml of water (3 cups and 1/3 cups. You can use only 720ml/3 cups if you would like less liquid)
250g of sugar
1/4 teaspoon of salt
Some slice of ginger
Some pandan leaves (optional)
Coconut sauce:
300ml of coconut milk
100ml of water
2 tablespoons of sugar
1 tablespoon of corn starch
2 tablespoons of water
Dough/Skin:
300g glutinous rice flour
200g of steamed purple sweet potatoes
220ml of water
