Regarding the cutting board stabilizers someone gave me a roll of shelf liner that is nonstick and spongy several years ago and I've cut that up into 5 or 6 different shapes for the kitchen and I use it all over the house when I need things to not move or slip. The roll has a price tag on it like $7 so save your money and buy a roll of that stuff it works great and you can rinse it with soap and water clean it up real fast and let it dry out in the rack.

If you are talking about that perforated style spongy shelf liner, my experience is that it has some chemical that stains wood. I had it in beautiful pale maple pot drawers in a new kitchen and when I pulled it out, there was a stain where every item had been in the drawer. Beware!

You can buy it in a cream color at the Dollar Store for $1.25. Mine has never stained anything... it has no color.

Wow the paella brings back memories. Mi abuela es de Espana and in our home it was not intended as a vegetarian meal. It was a side that went along with fish (grilled o broiled). She didn't use cauliflower, but a green vegetable kinda like broccoli. Her broth was a homemade bone broth.

Suggestion: toast the panko in a skillet with a LITTLE oil. This results in a final oven-baked product that has a much nicer color AND flavor. Toasting the coconut probably would work as well. I know when Nami of Just One Cookbook makes oven-baked katsu she uses the toasted-panko trick and I have used it before. If you don't want to mess around with frying it gives phenomenal results anyway. It makes it prettier too which is good, since the eyes play around a lot with the stomach's expectations, lol.

@@marybaker8582 Japanese style bread crumbs. They're flaky compared to normal store bought breadcrumbs. Very crisp-light-flakey so using them to imitate a fried texture in the oven works well. (But works WAY better when toasted first, like I said earlier, 'cause pale oven or fried goods aren't as nice lol.) They're definitely better for use as a coating as opposed to a filler, like "Western style" breadcrumbs are good for.

@@marybaker8582 a lot of pretty normal grocery stores carry panko now, like Walmart, sometimes even smaller stores. Sometimes they stock it in the international food sections (in Walmart this is usually close to the Mexican food aisle) and sometimes it'll be wherever they keep things like soy sauce. Sometimes just with the other bread crumbs they carry.

Vegan: use 1.5 cups water to rehydrate 2 Oz dry mushrooms. Use liquid for broth. Chop mushrooms and fry in olive oil. Butter beans or garbanzos.

I was thinking the same thing. Frankie on struggle meals made a struggle seafood paella and he used turmeric in place of saffron since it's more affordable.

@@junawallace7315 Thank you. I bought saffron from Trader Joe’s. One time for a recipe. It’s sat there for years until I tried to use it up. By that I had lost flavor. So I’m very careful about buying something for one recipe.

Glad Becky said you can use veg broth “instead,” because no vegetarian or vegan is gonna use chicken broth, ladies. You promised it would be vegetarian. I wish you had used the vegetable broth as first choice, then suggested the chicken broth as the alternative instead of giving chicken the priority as you did. Becky knows how to give vegan food its props, so that let me down. Better Than Buillion has a good low-sodium veg broth. Personally, I’d add some Franklin Farms vegan chicken seitan, it’s a good source of dense major protein. All your ingredients have protein, so it could stand as it is, but I’d add seitan.

I chuckled a bit as they kept calling the paella "vegetarian." Not quite accurate, as chicken broth is not vegetarian. But it looks delicious.

Um... as someone who keeps kosher, the Paella is no longer vegetarian when you put any form of animal stock into the pan. It's only vegetarian when you cook with vegetable stock. I could easily see someone serving this to a vegetarian friend thinking "They, it's vegetarian because American's Test Kitchen said so."

What?? I’m an expert in Kashrut, you certainly can use beef broth, chicken broth, etc. as long as it’s Kosher broth. I make my own all the time.

@@leannasplinter3236 It's a single statement and an off-hand comment, despite she still calls this dish vegetarian. And, if you're not following a vegetarian, vegan, or other diet that makes that distention clear, I could see someone making this with the beef broth and feeding it to someone who is vegetarian, vegan, kosher, etc. And, f there aren't meat bits to clue someone in, this can be very problematic. It's not idiots I worry about, but careless people who could care less to make sure they're preparing something their friends can eat.

My objection is that she kept calling this paella vegetarian, despite knowing she would be adding beef broth and after she added the beef broth. Could you bring the paella the way she made it to a dairy based pot luck? Nope!

vegetarian yes, vegan no. There are numerous different types of vegetarians, they eat eggs, milk cheese, a little chicken fat in broth, etc. There are also vegan chicken broths which taste just like actual chicken broth.

Well, that's not really "vegetarian" but it's healthier. You need fat for your brain to work. I dislike it very much when people refer to meat as "protein" as if vegetables didn't have any.

@wastrelway3226 actually, brain cells preferentially run on glucose, but when in a ketogenic (eg, starvation) state, the brain will switch over to using ketones, a fat breakdown product.

That paella is NOT a vegetarian recipe if it includes chicken stock, and saying, as you pour the chicken stock into it "and you can easily make this vegetarian by using vegetable stock" means you KNOW it's not vegetarian. I'm disappointed. So stop saying things like "Even though it's vegetarian", but that dish you tasted/made is NOT.

@@hellomarwan I've been a vegetarian for over 35 years and I cannot tell you how often people believe an vegetable soup IS vegetarian even when made with chicken stock, just because it has no visible meat in it. It is very shortsighted of ATK to continue this charade by entitling this a vegetarian dish but using chicken stock to make it.

Looks delicious,and I will make soon with veg broth, but if you are going to title the meal as vegetarian, don't even mention chicken broth. Really, too many people are already uninformed about vegetarian diets and to advertise as vegetarian and then use chicken broth makes them believe it is vegetarian with the chicken broth, when it is not vegetarian in any way with that addition. As a long-time vegetarian (45+ years) I know what to do to convert meat or animal broth-containing recipes to vegetarian, but most people don't know this, and it is really disheartening when a friend offers a vegetarian meal and then I end up with digestive issues later because It actually has a meat- or bone-based broth in it. I educate as I can, and I have come to the point of either not eating out or at friends' homes. It is just easier to say "no, thanks" than to risk offending someone, especially acquaintances I don't know that well, or not feeling well after a meal. A mis-named dish on ATK doesn't help the situation. If ATK calls it vegetarian, some people don't understand that it is not so if chicken broth is used.

Suggestion: change the name to plant-based. This is not vegetarian with the inclusion of chicken broth. Stating that you *could* use vegetable broth doesn't make this dish vegetarian.

You shouldn't assume vegetarians are necessarily looking for a "burger" that tastes like and has the texture of beef. I am sure recent meat eaters may be interested, but some of us don't consider it a sacrifice, and are satisfied with alt-burger products, or a home made equivalent.

Their comments were also directed toward the meat-tasting-is-what-we're-going-- for crowd as if that is something that appeals to all or even most vegetarians.. They even used a product that does not "pretend" to be meat or pretend to taste like it in their comparison so they could rank it last.

@sandrah7512 the title of the entire segment, veg burgers and not, includes vegetarian. The last recipe covered is vegan. What better keywords than vegetarian and recipe would you use if you are looking for recipes directed to vegetarians? And, yes, that's where I got the word in quotes "pretend" from -- the text. And that is exactly why I made my initial post. Many actual vegetarians are not interested in animal-flavored foods.

I've seen it for a relatively affordable price, comparable to beef, at grocery outlet. I don't know if you have that chain near you but if you do, it might be worth checking out.

@@nunyabizz50 I've never seen it for less than $8/lb and that's on sale at the cheaper supermarket, it's usually closer to $10. Ground beef goes on sale for less than $3. I'll stick to the cow at those prices.

Vegetarian recipe on vegetarian episode: uses chicken broth and then continues to call it a vegetarian recipe. Why not use vegetable broth as the default and then note that people can sub chicken broth if they don't need the dish to be fully vegetarian? (And I say this as someone who very much is not a vegetarian but can't understand why they'd whiff on something so basic.)

There’s a lot of reasons why people choose to stop eating meat. How good it tastes is usually not the reason people stop eating meat. making vegetarian dishes as tasty as any dish is the goal for recipes like these. Buffalo cauliflower as a replacement hot Buffalo wings is my favorites example.

So those veggie burgers are to appeal to meat eaters. As a vegetarian, I don’t want my burgers to taste like beef, and those Impossible burgers that look like pink flesh with bits of animal fat thrown in are gross looking. Love you guys but I’ll take the two “losers”.

I couldn't tell the difference when I accidentally consumed Beyond Meat in a burrito bowl, until I doubled over with intestinal distress 20 minutes later. Had to leave work for the day because it went on for hours.

I always love Jack and Julia segments, but didn't care for this one. I am a lifelong vegetarian, and comparing meatless burgers to meat wasn't really appreciated. I would have loved to hear what they liked and didn't like vs how close it came to being meat-like. It doesn't matter if it's not like meat... that's not the point.

You’re probably not in the target market. The target market is to try to get meat eaters to switch over to plant-based foods. I heard that on the news.

I’d also argue the segment was gearing towards how close the options resemble meat - fair that a longtime vegetarian wouldn’t care, but agree with above then that this segment wasn’t for ya is all.

I know it is not ATK’s mission to promote healthy food, but they usually do, as the cooking is from scratch with whole ingredients (other than in the baking and use of highly refined oils). Commercially manufactured meat products are unhealthy for humans with so many highly processed and manufactured ‘foods’.

They do now. Chris Kimball was opposed to making recipes healthier. Apparently he has a naturally high metabolism and good health, so he doesn’t see what the problem is. Becky’s food in particular tends to be plant based, which I love!

Props for the plant-based recipes, but is anyone else weirded out by Chef’s fingernails? Like, will she accidentally chop off a sliver? Or gosh, that’s unhygienic! 🥺

hey jack bishop, everyone is so tired of watching you test meat substitutes. vegans dont want to eat something that looks or tastes or smells like animals. and meat eaters dont want to eat fake animals. julia always looks uncomfortable. how about testing lentil or mushroom or tofu or cauliflower or tempeh or rice or bulger burgers?

My wife and I went totally vegan a year ago, we can not tell the difference between the impossible burger and regular meat, I use it in chili, spaghetti sauce, tacos anything you would make with ground beef, and it's impossible to tell the difference. I buy it at Costco and right now it's on sale for about $10 for 10 burgers. and Sprouts has the brick on sale BOGO free so $5 each so I am stocked up for at least 6 months and paid less than regular burger

I find it hilarious that people want their vegetables to taste like meat, but nobody wants their meat to taste like vegetables. Just eat a dang cow and stop ingesting "ground up, combined stuff".

Many folks give up meat on doctors orders or because the production turns their stomach. And meat is usually seasoned with plants such as spices or aromatics.

Meat really doesn't "taste" like anything unless herbs & spices (ie: plants) are added to it. Some people don't want to eat other sentient creatures or can't for health reasons.

most people who don’t eat meat do not necessarily dislike the taste of meat- they just don’t approve of its production. Nobody tries to recreate the taste of vegetables because nobody objects to growing plants for consumption

We have to fast for religious purposes (Eastern Orthodox Christian) for extended periods of time. I try to avoid processed foods as much as possible but sometimes it is nice to have something resembling meat :)

Nah, cow’s are like doggo’s. I wouldn’t want to eat a doggo, 😮. I personally don’t eat that processed stuff anyway, I much rather eat those cauliflower tacos over the impossible burger. Best 💚🌱
