Hey Kat: I'd seen this video before but after spending the day making Perbain's soup in a jar decided I couldn't pass this up. Pot cleaned, beans soaking in hot water and will dehydrate them tomorrow. I, SO, love watching all you gals videos. I'm 64, a late starter on prepping but I've hit the ground running. I also hot water bath and if health does well next year, moving into the pressure canning. Live in a rural area in Okla and can get the best local veg's. I've done pickled okra, pickled beats, B&B pickles, Dill Pickle (half was over processed but editable), jams, kraut two different ways. I also keep the dehydrater running a lot. It sure keeps me busy. I was getting so bored being retired. :) I can't thank you all enough for the inspiration.

It is now 2019 and I am still prepping. I took a couple of years off due to illnesses etc., but now I am beginning again by canning soups, beans,meats, and maybe a few other things. Not able to have a garden anymore so have to buy from the store. There are no farmer's markets now around here...maybe later there will be! Keep going preppers! ☮️❤️☀️🌈🌎😇❤️

I'm excited about the meals in jars "thing" too! I can't wait to make some up. I'll have to order the freeze-dried meat though, and that's quite an expense, so I appreciate this tip to help with the cost of the beans portion. Never thought to cook "regular" dried beans and then dehydrate them to make them like the commercial quick cook ones -- GREAT IDEA! That will help to defray the cost of the jar meals.

I pre-soak my dried beans for 24 hours, in hot water in my wide-mouth thermos. I just put 1/2 Cup of dried beans in a metal wide-mouth thermos, and fill with hot water (leave about 2" of space for foaming up). I put in 1 Tablespoon of baking soda , Shake several time during the soaking time, and change out the water and baking soda at least once. (This water change and baking soda helps remove the chemical "gas" producing effect of the beans.) Then I rinse, and cook the soaked beans in the pressure cooker, or freeze for future use. I chop or course grind up most of the beans for quick cooking, leaving a few whole beans, so that beans can be seen in the food for presentation, while the rest are there to add bulk, flavor, and nutrition. I never saw this way of doing them. What a wonderful "Prepper" idea for long term storage. I am so happy to find this idea. Thanks.

This video was one of the main reasons I bought a dehydrator! I have done several batches of quick-cook beans, even refried beans! And, whenever I make a pot of rice, I make a double batch, and dehydrate the extra for quick-cook rice. It rehydrates in 10 minutes with just boiling water. Thank you, Katz for being one of my first prepper inspirations.

Made that when i was still working up the courage to use my PC, which had just arrived. These beans look great, and I can see where they'd be handy to have on hand, more so than just canning some beans, although those also have their uses. I have started making and using quick cooking beans..............thank you so much for the information......the one I love the most is lentils ...........if you have not done then .try them.........................can be eaten like a snack.......rehydrated in under a minute.............yummy............

You just taught me a valuable survival prep. We can cook up our beans now while fuel is plentiful and then be able to serve them up with minimal fuel use after the coming collapse when fuel will be scarce. Also consider, for city dwellers post collapse would be two hours of cooking odors wafting out into the neighborhood, whereas just rehydrating them with boiling water will be a stealthy way to hide knowledge of your food supplies when the roving gangs are without. It's so good to hear from you. I'm sure what you see in the media is absolutely intentional. That are LOTS of Americans that do their very best to eat organic, healthy, whole foods....lots. Of course, there are plenty that don't as well. Some folks store junk for food storage, but I don't. I store real food. (Well, I do have a couple of boxes of brownie mix I bought on sale. LOL) Take care.

Yesterday I canned some pork and beans half of 900gm bag and they turned out great. the other half I dehydrated like you show how. today I am doing 1800 gm of kidney beans northern beans and another bag of small navy beans. don't use beans much but my son's family do a lot of chili so that is where most of these will go. so busy day today but a lot to show for it. much more fun than housework. thanks.

Great video!! We eat so many beans and many, many varieties which we either grow or buy locally. You can often get a better deal from a grower if you buy fifty pound bags. Even the local LDS folks get me 25-50 lb bags. Same with wheat berries. A friend buys the single bag beans like you showed, but she buys a case from the local grocer and pays much less than if she bought single bag. When I use the pressure cooker I add a teaspoon of baking soda since we don't eat pork.

I dehydrated cooked pintos. They just came out a few minutes ago. Oh, my gosh! I seasoned them, except salt. I used Penzeys Arizona seasoning, lots of garlic, and dry onion. It was hard not to just eat them I got a bit over a quart from a .pound of dry. My beans cost 99 cents at the dollar store. (They took an extra 30 mins to cook, I guess they were old.) At most, another dollar for seasonings and PG&E. What a bargain! I just can't thank you enough! This is real cost cutting!

I've put them in old blue canning jars and they look so nice sitting there, waiting for me to throw a handful into some soup. I just love the convenience of them and that I was able to make them so economically.

The first time I used a pressure canner I did a dry run (no jars in it) to see how it worked when it started making that hissing sound I ran from the kitchen thinking it was going to blow I knew I had to shut it off so I got my nerve and turned it off. I put it away knowing it wasn't for me. Then I started watching your videos. You are great and make things so easy to follow. Just want to say if it wasn't for you and the blue ball book I would still be hiding from that hissing pot

I'm glad you're trying to incorporate beans into your diet. They're such a great food. How about smoothing them out in a food processor or blender and spreading them on tortilla roll-ups, with other great foods that you do like? Of dipping the smooth beans with tortilla chips? You can even add pureed beans to soup, to make it thick and rich. And yes, I really like munching on the dehydrated beans just plain. I let folks taste them at a recent preparedness conference...big hit!

Thanks for posting this! I had gotten hold of a giant can of kidney beans and only needed a small part of the can. I used your directions for cooked beans, and tried it with the remainder of my canned ones. WOW! they came out looking like your results, and rehydrated perfectly when I checked them to see. I think I figured out my price to be about $0.16 to $0.18 per serving. And they will be so convenient! I'm thrilled!

I have a Neso SnackMaster dehydrator. It's not expensive, but works great. I bought extra tray and can go 10 trays deep. I love to quilt. Don't have much time for it though. The quilt pattern I use for my logs is called 'Cats Cradle'. It just made sense to me.

I'm dehydrating beans for the first time as well. Small red beans. I'm going to make a video on it but I'm waiting until I go to bed to dehdrate and I soaked in chicken stock for 3 days. I remember when I was hiking the Appalachian Trail I found already prepared Great Northern Beans that looked like your finished dehydrated beans. I plan on applying all this knowledge to make "meals in a bag" and go hiking with them.

This is a great method. Since the jars are so light weight, you will want to place a rack on top of your jars with something to weight them down with so they don't float or tip over in the canner. I use a garden rock I've cleaned and sterilized for this purpose.

I've been dehydrating cooked beans for...golly, years! The only problem with using fat in the cooking process is that even well dehydrated, the fat can go "off" and taste skunky. So if your goal is very long term storage, I'd recommend no fat in cooking. If its only for the season and you can keep your jars relatively cool, sure, go for it. Just my personal experience, YMMV.

Didn't pressure cook or can the beans. Cooked the beans as usual in a crockpot, then dehydrated them in a standard multi-tray dehydrator. Bagged some, jarred some, then pulled a vacuum with the brake bleeder to seal them. The mylar bags were "done" when the bags were sucked down as tightly as I could manage to pump the brake bleeder and then I used that same pressure to seal the jars.

Thanks! I think these would be great if you need to "stretch" a soup or stew for an unexpected guest. So much nicer than adding a bowl of water to the pot! Add water and some of these great beans. Or if you decide you want beans THAT day, and you have none soaking! Thanks so much.

Save myself weight in my food storage as well as room. Wonder if you might do a video on dehydrating ready to use beans in cans? Hi Katz great video, I have a lot of dry beans that now have an additional use :) Mike (hubby) made me some screens for my dehydrator trays out of window screen, He just cut the shape of the tray and cut me a hole in the center. They work like a charm especially when I was dehydrating my cabbage.

You can't use the jar sealer attachment on those jars, but as Katz's video shows, you can put the filled jars inside the FoodSaver canisters, and vacuum the air from them. When you release the pressure on the canister, the jar lid gives that 0h-so-satisfying "ping".

I'm glad you tried this, the FD food is out of our price range too. We eat beans almost daily so this will be a wonderful way to prep for me. On a day I have energy I can cook and on one I don't, I'll use my beans. I also thought what a great way to store left overs, they become MRE's ;) We do not have a Food saver (flood took it) do you think it will be o.k. in jars short term in the pantry? Greetings from NC!

You cannot can in a pressure cooker...but it's great for cooking 'fast food'. If you new to canning, I'd start out with foods that can be canned in a boiling water both. No special equipment needed, except a very big pot. You can water bath tomatoes, jams, jellies and preserves. I'd start with tomatoes. In my opinion, they are the easiest.

Mine softened beautifully. Bean are one of those things, that in my opinion, need to be salted when cooked, like rice and noodles, in order for it to taste right. I'll let you know if i run into a problem with this practice. Your beans in the can are probably salted too. I wouldn't dehydrate them if it were me. There good LONG past the expiration date.

I really want to try this. This would be such a good way to store beans! I wonder how canned beans would work. I have some that are getting close to the expiration date. I might try to dehydrate them first and see what happens. I have been told that adding salt to food you are preparing to dehydrate will make it tough and it won't soften back completely.

If they're really big, that means the got fully hydrated, which is a good thing. I wouldn't consider all that lovely, seasoned bean broth at the top of your jar a negative. Sounds like you did it right.

Not only the reasons you listed, but in a grid down situation, the fuel will be immense. Great idea! I'm curious, did the rehydrated beans retain the flavor of your seasonings? Saw Perbains question re: rice. Boil with double water, separate grains and dry? Hmmmm...

After watching this video, I've prepared several types of beans. This is perfect for bean soups, chili's and most legume recipe's. This also saves time and fuel especially if cooked in a Saratoga Jack or similar thermal cooker.

My daughter is a teacher, she just has way of explaining ideas that make sense to me... and the same with you, we are on the same page. I was just wondering how this might work if you cooked the beans about half way or a bit more and then dehydrated them. It would add more time to the cook process but I was thinking they might be easier to handle in the dehydrator...maybe stay whole better? I don't know...what do you think?
