Do you know that Odisha's famous Rasabali sweet has received the prestigious GI tag? To preserve its authenticity and heritage value, Kendrapada, the origin town of Rasabali has acquired a GI tag. This sweet dish is made with soft cottage cheese fritters fried in ghee and soaked in cardamom-flavored milk. A cross between ras malai and gulab jamun, this chenna based dessert is offered to Lord Jagannath as part of Chhapan Bhoj Mahaprasad.
This iconic sweet dish is created by Chef Sai Priya at Shangri-La New Delhi.
Recipe
Ingredients
1 cup Chenna (fresh cottage cheese)
1 ltr Milk
3/4 Sugar
1 tsp green cardamom powder
Oil to fry
Steps:
Knead the chenna for 3-4minutes . Add sugar powder and mix well.
Divide the mixture into 8-10 equal parts. Shape each to tikki shape.
Heat oil and fry these at medium flame once it’s light brown.
Heat milk and reduce the consistency a little. Add sugar and cook for 2-3 minutes .
Add the fritters and cook for 5-7 minutes . Switch off the flame and let it cool a little before transferring to another bowl.
Serve each fritter with a little milk at room temperature.
