What I have done is taken some organic coconut flakes and blended them in a high-speed blender (in my case Blendtec) and using a nutmilk bag I strained out all the "milk." Then I poured that into a jar and put it in the fridge for some hours until the cream and fats separated to the top -- which I then removed from the jar to use in my adzuki Thai curry (using the vegetarian green or yellow paste by a brand name Mae something or something Mae), mixing SOME of the regular coconut "milk" in the dish as well. With the milk from which I took out most of the cream I added about a tablespoon of organic coconut sugar and some of the "You Gut This" as my bottle was getting very low and I wanted to try something like this. How perfect that I ran into your video this very evening! We'll see how it works out. I love how "original" you are and how you try to keep things pure. -- Michele (formerly Michele Michael Reel)

It is not necessary to seal the mason jar with a lid. Its recommended to only cover with a cloth to allow some air exchange for the bacteria to enjoy…. However 2nd fermentation if desired can be done in kombucha bottles to add the carbonation effect….

For pouring that way with zero spills, though it will only work for the first one. Hold everything together (including topped coconut) just upside down then invert. Zero spills. You could use another vessel for an intermediary step to do it repeatedly, like you mentioned.

Use masontops and you'll never have to burp the jar. Best thing I've found for fermented vegetables.

You can use them, but the issue will be your kefir will not be as carbonated, if you are releasing it.

Thanks for this! I will try making my own coconut kefir water this week! But does anyone know what the ratio is between the coconut water and the coconut kefir? If I’m filling a 32 ounce mason jar, how much coconut water should I use and how much coconut kefir should I use?

Thank you for sharing. I’ve never heard of this before. Is it possible to do a smaller batch the reason I’m asking is Do the bottled cultures that you add to the coconut water need to be refrigerated? I’d like to make a batch for just a few days at a time. I’m out camping for a month without refrigeration.

I'm guessing you can use the same method with coconut milk/ coconut cream. To literally just be able to pour it and have it ferment for 1-2 days

The coconut Kiefer I got has to be refrigerated... I'm guessing the stuff you are using are not refrigerated... ?

I wonder if sucrose esters of fatty acids will cause problem in my milk kefir grains. As some coconut milks in the market have these ingredients: Water, Coconut Milk (7%), Calcium Phosphate, Emulsifier (Sucrose Ester of Fatty Acids), Sea Salt, Stabiliser (Gellan Gum), Colour (Carotene), Vitamin D2, Vitamin B12

first you said you prefer the white thia ones then you say the brown mexican ones. Are you saying the white are better specifically for the kefir and you like the brown to eat?

Is the kefir culture dairy or water kefir, presumably the former? When I've used water kefir the ferment is clear and not cloudy. Can you use water kefir grains with coconut milk?

Worst experience my family had was poking a straw into a coconut and drinking the waster. It tasted fine. I grew up in Hawaii and we did it all the time without issue. When I opened it there was MOLD 🤢🤢🤢🤢. We ALLLLL got so sick that night. My home was a horror movie scene with kids bolting to the restroom but being projectile vomiters before getting there. WE WILL NEVER EVER NEVER drink from the coconut without seeing the inside first. One of my kids wouldn't touch a coconut with a 10 ft pole now 🤣. If the inside is off. DONT TASTE IT. IT ONLY TAKES A TINY SIP TO RUIN YOUR HOME AND EVENING!

There has to be a way to ferment it yourself from coconuts. Most people around the world don't have access to the kefir grains or other cultures... Any ideas?

People share the kefir grains with friends or barter with neighbors. Same with scobies. The Synergy GT Raw Kombucha is how I started my first Kombucha and I've given several scobies away. You can also sell them.

Don't buy these starters! They are too expensive! You can make these starters yourself. Take grains of unpeeled rice, wheat and rye and fill a glass bottle about a quarter full with them and then fill it with water until there is no more air and seal it airtight. After two days they have a starter!
