I think you're my favorite homesteading and holistic educator. Just went on a binge for water wheel and saw & grain mill combos then was like hey wonder what natures always right is up to. I find your information to be very valuable. I'm hoping to acquire 5 acres soon and start homesteading. Perhaps you could do a video of a top 20 homesteading ideas or something similar. I was considering miniature cows recently as I learned they can be milked and require 1/2 acre per minicow. I thought about goats too. Your info about goat milk preference and digestion is intriguing. I'm also getting nerdy about the soils and composting methods and soil biology which I know you have a wealth of knowledge on. It'd be interesting to learn if you'd be able to comment on how wide your wings spanned for various topics, what you settled on, why, if you'd do anything different, perhaps what your future plans are. I am aiming for a symbiotic regenerative biome while being highly functional, preferably low electronic technology but carefully considered. Love your content, deep dives, perspective, ability to share your and others perspectives for us all to learn together. Keep it up!

This is something never worked for me, now I know what I was doing wrong, I left it in for too long. I never knew you can add honey or fruit to it, I always drink it plain, not the most pleasant taste 😅 Thank you for sharing this knowledge with us.👍. YES!! I would love to see more videos like this!!

I've read it's not advised to mix with honey due to it's antimicrobial effects

Yes, I like this as an occasional video. I like kefir. So I’ve read about making it. All the instructions about monitoring the temperature, etc., sounds more complicated. And I don’t have time for complicated. Your video cuts to the chase, making the process much simpler! Thank you. I will be trying this soon.

So does it absolutely have to be raw because I have low processed low pasteurized from a local Amish dairy

It's best raw because no denaturing has occurred and many other reasons like microbes occurring naturally in the milk but will work with any milk as you are adding the probiotics (kefir grains) they will do the work of main fermenting.

Yes! Please keep including the harvest videos in the kitchen :) It's always interesting and a glean point when I see the ways that the abundant harvest (of all aspects, garden to table) is used. Love the kitchen video

I just ordered the grains yesterday so this is perfect. Thanks for the video. If you are unable to get raw milk at the moment could you use organic from the store? Also I heard you can use the grains to make LABs but it sounds like separating the grains from it would be difficult

If it separates, then technically you can use the watery liquid as that is LABs, correct?

I prefer the curds and whey to separate. That way it is more like a yogurt, and the whey can be used to make salad dressing, etc. It does not harm my grains.

Yep that's mostly how I eat 80% of my diet is raw dairy, meat I raise or grass fed from friends, eggs, then veggies I raise. Fruit is the main thing I have to buy at this point.

During the second fermentation do you use kefir grains??? Just wanna be double sure. Or if anybody in the comments can confirm.

Remove the kefir grains BEFORE the second ferment. No need for the grains after the initial 24 hour first ferment. :)

Yes just a different inoculant. LAB is very good for your microbiome as well.

I have raw milk here and have been trying to make kefir for a long time, but it doesn't work. It works well with store-bought milk and also tastes sour and delicious. With raw milk I don't have a creamy consistency after 24 hours, but rather quark. what am I doing wrong? I reduced the amount of milk to 500 ml and kefir. but it does not work. Thanks

If you want it to be creamy with raw you'll probably have to strain out some or all of the whey. Store bought is homogenized which I assume is what is causing that your texture to be creamier from the jump. Also raw is going to have other bacteria which will affect the fermentation which will affect taste and texture but will be way more beneficial for the gut biome.

You shouldn't use wooden spoons, they can harber all kinds of bacteria, your should always use plastic spoons, much more manageable.

Plastic has toxic chemicals don't use that or plastic cutting boards unless you want microplastic in your body. Wood or bamboo I have 0 concern of "Bad" bacteria that's just nonsense from the sterilization culture of western medicine. Even if that were the case the bacteria in the kefir would destroy the "Bad" guys.
