Here in the US, in New England, settlers have used a weed called "cleavers" (galium aparine) - it's a sticky trailing little plant - if you grab a bundle, crush the leaves and stems a little bit, put it in a net and suspend it in the milk - it will curdle the milk in a short time...it also has medicinal purposes, and can be fed to livestock

I make cheese and I am a vegetarian and so use only microbial rennet, but while I learned that you can use thistles to make rennet, I never knew HOW to extract the compounds or even from what part of the thistle the rennet was made. You might want to check on what vegetarians can and do eat, what vegans won't - They won't eat honey: vegetarians do -

It works with soy milk! I have made tofu and the process is very similar to cheese making. You heat the milk, add curdling agent, wait for the proteins to separate and then scoop the curds into a mould. Peas work too but they contain more starch than soybeans so you need to filter it out, otherwise the tofu texture will be pasty. I have no idea about oat, it might be tricky to separate all the starch. Mary's Test Kitchen has videos on making tofu from things that are not soybeans if you're interested in that.

When you use acid, it denatures the proteins, causing them to curdle. You are making paneer. Feta if you drop it into a brine. Rennet is needed to make the melty cheeses
