Homemade ravioli stuffed with ricotta and spinach are one of the traditional Italian main meal seasoned with a simple sauce or with butter and sage. The doses are for 6 people and if you have any leftover you freeze them!
For the egg pasta:
150 grams of flour
150 gr semolina
3 large eggs
A pinch of salt
For the ravioli filling:
300 gr of clean fresh spinach
400 gr of drained cow's milk ricotta
60 gr Parmesan cheese
nutmeg
salt
1 egg
pepper
For the sauce:
600 gr dii puree
3 tablespoons of extra virgin olive oil
Half onion
Basil leaves
You will need: IMPERIA pasta machine, pasta cutter wheel, large tray, fridge paper, pastry bag
We advise you to prepare the filling of the ravioli the afternoon before to carry on and the next day make the pasta.
Ravioli with ricotta and spinach are an excellent idea for a vegetarian first course, for Sunday lunch or for those days when you don't eat meat.
