No they don't, it will change the flavour profile of the stew completely. It would bring in more of a "metallic taste" to the broth that most don't want. Either feed them to you dog, discard them or if you are a zombie eat them raw.

I didn't see any seasoning apart from thyme. no salt while cooking or even seasoning the flour or the stew? or are you using a seasoned broth? Just wondering since there is a lot of vegetables and meat and just a touch of salt at the end. Appreciate any feedback on the seasoning component.

I use chicken stock, homemade, for rabbit stew, not beef... I think that beef is too strong of a flavor, and chicken lends itself to allow the rabbit flavor to come through...try it! Also, I salt and pepper my rabbit before flouring and browning.

I wouldn't do a rabbit stew like a beef pot roast. Do a roux of the offal. They leave it in specifically for rabbit stew, you should be using it. Consider barley instead of potatoes. Mirepoix is inescapable, but consider sage instead of thyme to distinguish this from a braised beef stew.
