How to Make Saffron Buns - The Victorian Way

Mrs Crocombe is making Saffron Buns for Easter. Saffron is a very expensive ingredient, grown in both the South West and near Walden (hence the name, Saffron Walden). They are a lovely treat and guaranteed to bring a bit of colour to any Easter table.

The Victorian Way is filmed on location at Audley End House and Gardens in Essex, UK.
INGREDIENTS
Makes 10-12 buns
Flour - 250g / 9 oz / 2 cups
Sugar - 55g / 2 oz / 1/3 cup
Salt - a pinch
Yeast - 4g dried or 10g fresh
Milk - 90 ml / 3floz / ½ cup, slightly warmed
Eggs - 1 egg, lightly beaten
Currants - 55g
Spices/Cinnamon, cloves and mace - a pinch of each
Lemon - the zest of ½ lemon
Caraway seeds - (optional) ¼ tsp
Butter - 30g / 1 oz/ ¼ stick
Lard - 30g / 1 oz/ 1 tbsp
Saffron - pinch, soaked for 2 hours in 2 tsp warm milk
To glaze:
1 egg
Pinch of salt
1 tbsp milk
METHOD
First, make a basic bread dough. Combine the flour, sugar, salt, egg and yeast together with enough milk to make a soft, but not sticky dough. Knead for 15-20 minutes and set aside in a warm place, covered with oiled plastic wrap or in a bowl with a cloth over until it has doubled in size (roughly 2-3 hours).
Once the dough has risen, remove it and flatten it out slightly. Soak the saffron in the warm milk to get most of the colour out. You can then add add your other ingredients. Put the spices, lemon zest, lard, saffron in its milk (which should now be yellow) and currants in the middle, fold it up, and knead again, folding and squeezing so that the new ingredients are well-incorporated (NB: these days you can also just put everything in a food mixer armed with a dough hook!). Cover again, and leave to double in size once more.
Once the dough has risen, lightly grease two baking sheets and shape your dough into 12 equal buns. Round them off and leave in a covered bowl for 20 minutes to double in size once again.
Whilst waiting, create a glaze with an egg, a pinch of salt, and 1 tbsp of milk. When ready, brush over each bun. Then, bake in the oven at 180c / 350F for 15-20 minutes until each bun is golden brown. Serve on their own, or slathered with butter!

Stay safe everyone - thank you for watching and for your generous support. Below you'll find some answers to questions you might have about this particular recipe. If you try making Saffron Buns for yourself, don’t forget to share the pictures with us! WHERE IS MRS CROCOMBE FROM? Mrs Crocombe was born in Martinhoe in Devon and worked there as a teenager, eventually moving to London. Saffron was grown in Cornwall and Devon from the fourteenth century and was being grown around Walden - renamed Saffron Walden - in the seventeenth century. The Audley End estate borders Saffron Walden and it is the nearest town to the house. CAN I USE FRESH YEAST? Yes, you can. 4g (or 1 good tsp) of dried yeast is roughly equivalent to 10g (or just over 1/3 oz) of what we now call fresh yeast. Mrs Crocombe would have known it as German or compressed yeast. Whatever yeast you choose, it is worth mixing it with the warm milk to get it started. Be careful not to overheat the milk though. DO I HAVE TO USE LARD? If you have lard, it is the best fat to use, for it gives a real softness to the dough. However, you can substitute butter or vegetable shortening. WHAT IS MACE? It is the outer skin of nutmeg and was very popular as a spice in the Victorian era. It is quite a savoury spice, and if you are not used to it, we'd advise going easy on it. CAN I USE OTHER FRUIT? Of course - currants are traditional, but you can use whatever you have. WHAT IS THAT METAL SHAKER? A flour dredger. All Victorian houses would have had one (or more), for flour, sugar and anything else they needed to sift onto things . WHY WASN’T LENT OBSERVED? The Lenten fast was very much a personal thing but had been in decline in the UK since the Reformation. Some people still observed the Catholic tradition of four weeks of fish and no animal products, but most did not. There were, however, some foods associated with Easter itself: saffron buns were golden and, like cross buns (often called hot cross buns, even when eaten cold), they contained things like eggs and lard which were frowned upon during Lent. Lamb was also popular on Easter Sunday, for it was a rich person's dish (mutton was more usual), and linked to the idea of Jesus as the Lamb of God. Eggs were also associated with Easter for they symbolised new life.

Dear Mrs. Crocrombe, As a historical fiction writer, I find your videos very helpful indeed. A character in my novel was JUST making buns like these. I was quite excited to see EXACTLY how she might have done it. While she's not my main character, I now feel like I could add a better explanation of how she did it should the others ask her! I just wanted to say I absolutely love watching these cooking videos. I found them back in December the morning of my surgery to have my entire large intestine removed due to ulcers. I was terrified being only 19 and going through a major surgery. These videos calmed me down right up until it was time for me to hand my phone to a nurse. I don’t know why KZbin recommended the channel but I’m so glad they did! So thank you for all you do and I hope you continue to make more videos

Straight Razor Daddy a 25lb bag is a waste if some barely uses flour, and not everyone has space for a 25lb sack of flour. Get off your high horse. Besides, in terms of emergency preparedness, dried grains and legumes are much better to have as they’re more calorie dense and have a good balance of protein and carbs. Better fill your larder with dried legumes and grains, as well as tinned fresh produce.

you must have some super gigantic hands if you think a pinch of salt is a tablespoon!! People with normal-sized hands will find a pinch of salt equates to a little bit more than an 1/8th of a teaspoon.

My favourite episode? I would have to say the pancake episode! that was my gateway episode in knowing Mrs. Crocombe and Audley End. But the episodes from the laundry, apple orchard and the dairy were all my favourites as they show us a glimpse of how the whole house operates as well as their lives during the Victorian Times.
