Do the juniper berries have to be fresh or can they be dried too?

dried is most common- but bonus if you find them fresh :D

if you do everything right, it ferments perfectly along with everything else and you can eat it too!

How long does this last? Should i keep it in the fridge?

it can last months and even years! the fridge helps keep the cabbage nice and crunchy. i definitely recommend cold storage for this reason. but if kept under the brine and airtight it is fine!

jars with rubber rings allow gas to be released. other jam jars with one thread also have no problem releasing gas, just be careful with maison jars with three threads that can build up pressure

I just don't tighten it all the way. Doesn't matter what jar you use then.

2.5g salt, not 25g per 100g cabbage.

Do I have t use a glass bottle? I notice everyone is using one....is anything wrong with a plastic bottle?

as long as the plastic is food safe - but glass or clay is a lot better
