Can u use baking powder instead of bicarbonate of soda

You can do however you would have to use a lot more baking powder , bicarbonate soda is widely available in all UK supermarket and amazon and baking powder might affect the way the cake rises

when ever i do mine the cake dips in the middle i followed this recipe aswell

Are you opening the oven door in between ? And is your oven on the correct temperature , often when you open the door the heat escapes and the cake drops down .

Same i tried it today and mine has sunk in the middle. I followed the recipe to the letter and didn't open the oven door etc so not sure why.
