I have made several of your recipes now, as well as others such as Way of Ramen and Adam Liaw’s and while those are good I think yours yield consistently the best ramen. Thank you for sharing them.

Made this tonight. Was delicious but very salty, maybe I used the wrong Soy sauce and incorrect amount of salt added. Noodles were great, I left the egg out of mine. Thanks for your recipe, keen to try your others.👍

I have a Mara to atlas pasta machine, but am not sure if it could handle a lot of low hydration, alkaline noodle dough. Do you know where one could procure a cast iron and brass one like yours?

The one I use is an old Japanese noodle making machine. Current and similar products are also available on Rakuten and Amazon in Japan :)

How many bowls of Ramen will this make, I'm guessing about 8? Also do you give all your pork and chicken bones a pre-wash? Thanks, those looks delicious.

hi thank you for watching! can take more than 3 liters of soup. The bones are used without pre boil. just remove scum :)

You can but you will not get the same flavours.

Still trying to figure out if it’s best to add dashi to the BROTH or the TARE . this channel (and others ) have done it BOTH ways smh
