I had a slightly different way to take it before your explanation. I see the phrase "an useful analogy is of [the mind being like the sky]" as a sort of metonymy by reduction (I just googled, it's called synecdoche, the use of a part for the whole): what would make this a metonymy is the fact that the only way to produce an analogy is by means of thinking, so the act of thinking can be implied and become redundant. Hence the whole sentence would be "an useful analogy is THINKING of [the mind being like the sky]", and in turn, since we now have the verb, it's clear that the object is the name of an action (or the non copulative verb "to be") to be compared among alike things. Following the same line, I believe a step further should be valid, once already known we're talking of the mind: "an useful analogy is of the sky", since this is another valid metonymy: the only way to make an analogy is to compare two objects that must be alike, so by mentioning just one object the second must be the one being discussed (the mind), and since there's no action, it'd imply we're talking of either an already discussed action (not the case) or the fact of just being alike.

It is a reduced relative clause. 'A useful analogy is the mind which is like the sky' can be reduced to ' a useful analogy is the mind being like the sky'. For example, 'another example is a man who is like a superhero' can be reduced to 'another example is a man being like a superhero'.

Grammatically, both are correct. If I hadn't seen that original sentence, I would say a useful analogy of the mind is being like the sky. However, they carry different meanings.
