1 - Rub: 1x salt for 4x paper portions + mustard 2 - Grass down, meat up 3 - 2h for 225f 4 - More 2h for 250f 5 - after 4h - use water spray, or vinegar with apple. Spray all over the meat, no need over grass. 6 - After around 5h. Get the brisket, cover with paper. Now grass up and meat down. Put it back to the smoker. 7 - With butcher paper, raise to 275f. Leaver for around 2 - 2:30h 8 - Check inside temperature with thermostat. It should also fell as a knife in a butter. If is not soft enough inside, leaver for another 1h 9 - If ready, get the meat, remove paper. Wait temperature to get around 150 to star cutting. See video around 18-18:30 to check how to cut.

You just have a way of making everything easier. Your ability to explain something and have everyone understand it and enjoy listening to you, second to none my friend. At 65 I have issues with understanding people who either talk fast or just plain have a voice that's difficult for me to hear, along with their not explaining things clearly. Just need to add a 24 hour brine that includes garlic, onion, pepper, celery, thyme, rosemary, worchestyre sauce, mustard, pepper corn and beer!… that brine combined with this recipe is gold!

Okay. Finished that first ever brisket and fillowed these instructions to the letter.I used a wood burning smoker and had a little trouble keeping the temperature level but when it was done it was awesome. Juicy and tender, and almost fall apart tender. Thanks for a great cooking class..

Invest in a digital smoker. I just bought a masterbuilt for 350$ . I had a wood pan bullet smoker and was difficult to keep the temp. The smoker I have now is the bomb . Plus the store had a sale beef brisket a 14 pounder cost 30 bucks . That's why I bought the smoker .Smoke if you got em

Born an raised Texan And my favorite rub is Salt Pepper Mustard And Stubbs bbq seasoning 🤤 It’s amazing and this Stubbs bar BQ spice rub is super good to put inside of mayonnaise and catch up with the seasoning with a little squeeze of lemon mix all of that up it’s the best fry sauce ever 🙌🏻

I just smoked my first brisket with your help, but I had to use a charcoal grill and put the charcoal and hickory chunks on one side. It took a 14 pound brisket 8.5 hours to reach 160 inside with the heat around 265 + -13 degrees. I still have 3 hours to go after I wrapped it. I put some pats of butter on it before I put it on for the final time. Thank you very much for your video. I can't wait to taste it. This is the longest I have ever been on the grill. I like it though. 👍😎👍

I usually do fat size up so the juices flow through it, but looking at that its definitely more tender than mine. I've never thought about spritzing the brisket. I had no idea what a pellet stick was, but I now have one in my Amazon cart. Thanks for the great tips.

Fat down always exception if the heat flows from top then fat up. Fat Juices do not flow through the meat just FYI. Fat protects the meat from the heat. If you want to think the fat will magically flow through the meat then go for it but that has not been proven to be true.

Ever since a visit to Katz's in NYC (for their Pastrami, c1991), I have been a fan of brisket, though it is much harder to source in the UK. At 63, I am now researching how to smoke brisket and making Pastrami. As a complete beginner to the intricacies of both, I am very taken with your style of guidance and your video of how to make smoked brisket will be my 'go to' instructional video. It is both informative and well demonstrated. I will be making both smoked brisket and Pastrami in the near future, utilising my large charcoal BBQ for the process. Thanks to you, I have also found out about the 'pellet smoker' and may also investigate the gloves and I think I'm all set. Thank you.

I treated myself to a pellet grill for Father's Day (supposed to arrive this morning actually) and I am doing everything I can to learn the art of smoking. This video is most definitely one of the best and most informative that I've see. Thank you very much. Also, nice grill. Yoder is just down the road from where I live.

You will like it. He made this more complicated than he needed. I don't even check the brisket until 6-8 hours. Sometimes I wrap it but it usually takes about 11 hours. 200 degrees is what you are looking for and it always has plenty of smoke without the smoke tube thing.

I have been a back yard bbq'er for a few years and just acquired my first pellet smoker. I always thought of it as kind of "cheating" but I am finding out that it's a little different ball game. The smoke tube is a great tip, I will be picking one up soon. Brisket is my favorite meat to smoke and my go-to seasoning is pink salt and fresh cracked peppercorn. People are always surprised that the "secret rub" is salt, pepper, and (cherry) smoke. On occasion I will experiment with other ingredients. Honestly I think the secret recipe is temperature control. I have a great stick burner and I love the act of tending the fire, I feel that's where a good portion of skill comes in. And I do have to agree that his voice and demeanor is very comforting. I just did my first brisket last week following the steps in this video. During the smoking I kept telling my family that it was just a trial run just to keep expectations down. But boy-oh-boy, it came out juicy, and falling off the bone tender. I was so proud of myself as a first timer. They even called me a pro! How about that? I do salt and pepper on my brisket but I top it with Traeger's Coffee Rub. It adds a little sweetness and some depth from the coffee. Crazy good.
