I did this about a month ago on my kamado Joe. My butcher told me not to bother taking the silver skin off, so I didn’t. I have to say it’s the best pulled beef I have ever had. Keep up the great work mate. Fantastic. Make sure you get all the bone marrow out. Liquid gold
