Watched a lot of roti making videos. This is the best one so far. Also thanks for the tip of covering them with cotton cloth at the end.. I always had the problem of condensation in my roti box. This helps

Thanks for the fine points! I find using the tapering belan really difficult; it tends to make the middle thin and the Estes too thick even when I try to rock it and avoid that. The flat one seems to work much more evenly with less problems. Maybe I’m doing it wrong. I don’t have a gas burner so I just flip it back after cooking the second side, and they puff great, but better when I let my dough rest a bit longer.

A big thanks you!! So I have been trying phulka for like a week or more & would always end up with papad like roti! I was getting the atta right but rest wrong . below 3 very useful tips from u & m rocking it 1. edges should be thinner 2 flame should b between medium or high 3 finally when placing roti on flame, keep flame low initially & then increase it. Big Big thank u! Will serve it to my wife when she is back after lockdown B-) Subcribed.liked.shared.

okay all this time I thought I have to cook them in low flame bc I was worried about the inside being uncooked. then that's why my rotis turn hard :((((( I've seen so many videos for tips but this is the first time I heard abt cooking in high flame. thank you so much for the tips!

Nice video , the traditional brass box caught my eye, please clear my doubt how long do u knead the dough first and after resting the dough for a while how long should u knead?Also the exact way to knead..cause some of us just use our palm some apply pressure using knuckles, now which method gives you best results.

Is cooking on the direct domestic gas flame injurious for health? I have heard about this but I'm unsure how much scientific it is.

For any kind of cooking, good ventilation is important. If you've a kitchen exhaust fan, it should suck out the fumes, odours, grease and other airborne products from cooking. I did read that cooking over an open fire exposes you to more harmful substances. However, having grown up in the South Pacific, we cooked on an open fire in the kitchen all the time. People still live to their 80s and 90s.

A well presented roti tutorial. You don't mention what size portion of dough is being rolled out however and what diameter the dough circle is which will determine the desired thickness of the roti prior to cooking. Your rolling technique is a joy to behold. It must have taken quite a while to perfect it under your mother's direction.

Thank you for sharing the tips and tricks of making phulkas. I am new at roti making and am facing a problem when I place my phulka on the burner for puffing up. The phulka begins to puff up but gets either pierced by the burner plate and all steam escapes. Is there a solution for this ?
