@@edotblair i used to work in the culinary world for a decade. Raw tuna is red. Cooked tuna turns to a white gray. Look at pictures online. A rare steak will have the red inside but the white gray outside. Since they are just out pulling it out and mixing with Mayo it’s unsafe to serve it like that unless it’s high grade. And high grade isn’t cheap. No way there would be 6$ foot longs.

That’s like saying some fully cooked steaks look gray and some fully cooked steaks look red. No that’s not how any of this works. I mean there might be some discoloration but that stuff was red red. Like not pinkish but red. If it was pinkish I’m on the same side as you are. Trust me.

So what you wanna do to avoid the glove and hand issue is mix it as you did. But after the mayonnaise is dumped into it you wanna mix it with a rubber spatula it works amazing. From a fellow sandwich artist in Texas. \m/

If you still work there, it might be a bit faster if you slice and x into the bag of tuna from corner to corner. The tuna falls out really easy! Just wanted to offer a way to make the process slightly faster
