My favorite part about this video is that you’re making best with what you got. Their is no high budget production, fancy kitchens, scripts or fake laughter and yet the video is still great quality and right to the point. Exactly (imo) how KZbin should be. Grandmother Tillie used 1 whole Thai pepper and one or two cloves of garlic and dill seed. I don’t think she added sugar. She’s gone now. I should have had her show me exactly how she made them. But I certainly do remember what was in the jar and how they tasted. Yummy. And she lived into her nineties. Health aided by these pickles I’m certain.

You said to put these in the fridge over night. What's the texture like compared to like a supermarket pickle the next day? Can you put them in the fridge or some sort of storage area longer, if so how long would you recommend? Looks like a great recipe, can't wait to try it!

Next day, the texture is crispy and flavorful. You'll be shocked how quickly they "pickle" if you slice them similar to what I did. Whole cucumbers will obviously take longer They tend to soften a bit the longer they remain in the jar and refrigerated. I personally think the flavor is best in the first week but it has a lot to do with the cucumbers you use. If you jar them hot, fill the jar to the top and immediately close them tightly, it will create a seal as it cools that will allow them to last for several months or longer unopened without the need for further refrigeration unless opened.

Great video, very informative, and I love spicy pickles so this is great. I've seen videos that recommend cooling down the brine before adding it to the pickles and others that recommend adding in hot liquid brine, is there a difference? What are the results of both, or are they the same?

That jar of freshly made pickles does look colorful and delicious. But if I were to use as many chilis as you did I'd be on the floor, red faced and begging for milk after one pickle spear. I think I'll nix the Habaneros and go with just two of the Bird's Eye chilis. Thanx for the recipe; I'll be trying it very soon. Be well and take care.

Absolutely. But you'll need to let them "pickle" for a longer period of time to absorb throughout. Slicing them will give you pickles the next day. Leaving them whole requires a few weeks (usually around 3 weeks but Ive had them absorb more quickly, depending on the size of the cucumbers)

Hi Dan. Looks yummy! Would like to know burn factor on these. I love peppers but this combination is like volcano hot! Does the heat get completely absorbed by the pickles? Or, does it stay mostly in the juice? Thanks!

Hey Rozani! It's somewhere in the middle. My heat tolerance is probably a little bit higher than the average person's so it really depends on what you consider hot. Compared to something like a Tabasco sauce, this is hotter. Keep in mind that the range of heat in any pepper can vary quite a bit especially with Habaneros. Habanero's range from 100,000 Scoville units all the way up to 350,000 Scoville units depending on how and where it was grown. If you're very sensitive to pepper spice, I would suggest only using one habanero and a couple of Thai chilis for this recipe.

Nope! It just cuts some of the tartness from the vinegar. This recipe (with or without the hot peppers) has a very classic dill pickle flavor. Probably a little more well rounded than some of the lesser store-bought brands.

Not long at all. Almost immediately. I don’t tend to do the whole “hot bath” treatment to create a seal afterwards so putting the liquid in really hot creates a fairly decent seal as it cools.

I believe that one was a 24 oz. If you find yourself coming up a little shy of filling the jar, add equal parts vinegar and spring water (50/50 mix) to top it off. I've had that happen many times.
