Dry lotus leaf is similar to a dasheen leaf & is used for sticky rice, what he used is dry lily flower also called lily buds or gum jum.

Cornstarch..tapioca..arrowroot and potato starch are all thickeners made from different sources.

Good morning Vedesh & team, I watched this morning around 3 am but didn't get the time to comment. I must say that uncle Lee, knows his way around those dishes. It's real traditional. Arrowroot is something different from corn starch but it's the same thickening agents, Arrowroot is more glossy kinda finish too. I like the noodles, which we may try. Arrowroot powder, like cornstarch is used as thickener. It is not cornstarch. It is the powder from the arrowroot plant , which is the root found in St vincent
