winter melon ring _ 450 g
shrimps, medium _ 6-8
dried scallops, soak _ 6-8 g
glass noodles, soak _ 15-18 g
ginger, julien _ about 1/2- 1 Tbsp
SEASONING FOR SHRIMPS
salt _ pinch of
white pepper, ground _ pinch of
SEASONING FOR SAUCE
oyster sauce _ about 2 tsp
sugar _ about 1/2 tsp
white pepper, ground _ about 1/2 tsp
dried scallops soaking water _ about 1/4 cup or more
cooking oil _ about 2 tsp
coriander stems, finely chopped or scallions for hint of flavour/ garnish
