Hola! Para nixtimalizar el maíz, te recomendamos utilizar 1% de cal por el peso de tu maíz. Por ejemplo, 1 libra (16 oz) de maíz necesitaría 0,16 oz de cal.

How do you store them if they aren’t eaten right away and do you heat up like normal tamales to reward?

Great question! If you have leftover tamales, you can store them in the fridge for up to a week or freeze them for longer storage. For reheating, steaming is ideal to keep them moist, but you can also reheat them on a comal with the corn husk once thawed for a delicious touch. Enjoy your tamales!
