Takikomi Gohan (炊き込みご飯) is a wonderful and comforting Japanese mixed rice recipe made with seasonal ingredients. This recipe is also gluten free!

Cook time: 60 minutes
Serves: 3-4 servings
Ingredients:
2 rice-cups Japanese short-grain rice (Equivalent to 1 ½ cup (360 ml))
3 dried shiitake mushrooms (.5 oz / 15 g)
½ cup (120 ml) water for hydrating dried shiitake mushrooms
⅓ package konnnyaku (3 oz /85 g)
1 piece aburaage (deep fried pouch) (.7 oz / 20 g)
3 inch (7.5 cm) carrot (2 oz / 60 g)
4 inch (10 cm) gobo (burdock root) (1 oz / 35 g)
1 skinless boneless chicken thigh (4.8 oz / 135g)
1 ½ cup (350 ml) dashi
1 ½ Tbsp. mirin
1 ½ Tbsp. soy sauce
a small bunch mitsuba, or 1 green onion

hello! you may not read this, but I am so grateful for you recipe channel/website. my mother is from the countryside of Japan, and growing up she always cooked Japanese food at home. She is no longer around to show me these recipes, a few I remember from helping her in the kitchen but many I do not remember. I will be a first-time mother in December, and I want to make the same foods my mom made for me, when my baby can start enjoying solid food. your cooking channel has made that possible for me and I am truly so thankful. ごま油を少し入れておけば、さらに美味しいものになりますよ。 If you add a bit of sesame oil to the rice cooker before cooking, it’ll become very fragrant and flavourful. 😋

I tried your ginger rice recipe which is like this and it was so good! Btw, maybe add a note @3:29 to remind people to save the mushroom stock or they might just drain it down the sink lol!!

Can you make a Japanese Fried Rice recipe? I recently went to a Japanese ramen place and with our bowl came this very delicious set of fried rice which to me had pork or chicken? With egg in it and the rice looked brown but it was the best flavored rice I’ve ever had and i think it might of had some sort of root or seaweed in it

Hello! Thank you for this recipe. I tried this and it turned out very delicious! But I have a little problem. I live alone so I ended up with leftover takikomi gohan. I can't finish all by myself in one day. Is there any good way to keep takikomi gohan? Is it okay to freeze it in freezer? thank you!

Hi Mark! Marlow is correct. Also, dried shiitake mushrooms have much more flavors than fresh shiitake. For example, if someone is not a fan of shiitake, fresh mushroom has less flavor and fragrance, so it's a better choice. :) For those who use fresh shiitake, don't worry about shiitake dashi not in the liquid. BUT make sure to add the whole 1 ½ cup (350 ml) dashi. :)

It should be OK, but you should check the rice occasionally to make sure the liquid is absorbing properly. If the liquid is gone but the rice is not yet cooked through/fluffy, add more dashi (or water-dashi mix). Try to get it at the bottom without disturbing the layer of ingredients on top. :) Otherwise the bottom of the rice may burn and become hard to scoop. Then again, some people like that flavor.

I tried this recipee last week but the middle of rice is slightly undercook. Is it because I use local rice, not japanese rice. Or should I add more stock if I put lots of ingredients?

Hmmm did you use a rice cooker? The difference in rice could be the reason, but it can be other reason too... it's hard to know what went wrong without getting more information.. Thank you for trying my recipe!

ah, I think that's why. Always soak Japanese rice at least 15-20 minutes (30 mins preferably). That way, water content inside the kernel is higher and it becomes fluffier rice. :)

Hi Susan! IP can be a rice cooker, but I've heard from JOC readers that rice sticks to the inner pot. Japanese rice is more sticky than other varieties of rice, and since it's more expensive as well, I don't plan to waste my rice cooking in the IP... I'm so sorry I can't share the rice recipe... maybe other types of rice might be better than Japanese short grain rice.

Hmm what do you think was the problem? It had too much water or too less water? Did you put about the same amount of ingredients (non rice ingredients) like mine?

Just One Cookbook I think my rice pot was just too small. It would try to cook, but then go to warm. Cheap Brands Mart pot until I could buy my multi-cooker. I am loving my Instant Pot.

Ah I see. I've never used instant pot for my precious rice (It's a Japanese thing not to waste a single grain of rice...), but you might actually make better rice in IP. If the rice sticks at the bottom, make porridge with the leftover rice so it'll be no waste. ;)

It has distinct smell until it's cooked. It's more for texture than taste/fragrance. :)

Long grain rice is not as sticky as Japanese short grain rice. :) You know how rice is stick to each other when you see sushi rolls? Long grain rice are great for fried rice etc. :)
